1 long loaf rustic bread, such as ciabatta (about 1 1/2 pounds)
3 tablespoons Dijon mustard
3/4 pound sliced ham
4 cups grated Gruyere cheese (about 8 ounces)
1 cup finely grated Parmesan cheese (1 ounce)

Steps:

  • Preheat oven to 400 degrees with rack in bottom third. Heat milk in a saucepan over medium heat until hot, about 5 minutes. Melt butter in another saucepan over medium heat; add flour, whisk to combine, and cook 2 minutes, stirring occasionally. Add 1 1/2 tablespoons thyme, then gradually whisk in milk. 3 cups whole milk
1 pinch freshly grated nutmeg
salt and freshly ground white pepper to taste

12 ounces thinly sliced jambon de Paris (high-quality, wet-cured ham)
10 cups coarsely shredded Gruyere cheese

2 cloves garlic, crushed
2 bay leaves
2 tablespoons butter
¼ cup flour

dijon mustard, to spread
1 cup gruyère cheese, grated

  • In a saucepan, combine the milk, double cream, onion, garlic and bay leaves and heat over a medium heat until it just starts to boil.
  • Take off the heat and leave to infuse for 10 minutes.
