Yield Serves 6

Number Of Ingredients 10

For the toasts
twelve 1/3-inch-thick diagonal slices of French or Italian bread
1/2 cup crumbled Roquefort (about 2 ounces), softened
2 tablespoons unsalted butter, softened
For the salad
1 tablespoon Sherry vinegar or red-wine vinegar
1 teaspoon Dijon-style mustard
1/4 cup extra-virgin olive oil
4 cups torn frisée (French or Italian curly chicory), rinsed and spun dry
4 cups torn arugula, rinsed well and spun dry

Steps:

  • Make the toasts:
  • Bake the bread slices on a baking sheet in one layer in the middle of a preheated 350°F. oven for 10 to 15 minutes, or until they are golden. The toasts may be baked 1 day in advance and kept in an airtight container. They may also be baked at the same time as the croutons for the pea soup. In a bowl cream the Roquefort with the butter and spread the mixture on the toasts.
  • Make the salad:
  • In a large bowl whisk the vinegar with the mustard and salt and pepper to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. Add the frisée and the arugula and toss the mixture well to coat the greens with the dressing. Season the salad with pepper, divide it among 6 salad plates, and arrange 2 toasts on each plate.

ONION MUSHROOM SOUP WITH CHEESE CROUTES

ONION MUSHROOM SOUP WITH CHEESE CROUTES image

Categories     Soup/Stew

Yield 4 servings

Number Of Ingredients 12

2 tblsp butter
5 cups thinly sliced onions (about 2 large)
1 large clove garlic
2 tsp brown sugar
1/4 tsp dried thyme
1 bay leaf
1 cups thinly sliced small mushrooms
1/2 tsp each salt and pepper
1/3 cup dry sherry or wine (I used cooking sherry)
4 cups sodium-reduced beef broth or vegetable broth (I used the packages of beef broth)
1 cup shredded swiss cheese (I used mozerella)
4 slices baguette

Steps:

  • In large pot, melt butter; cook onions, garlic, sugar, thyme and bay leaf, stirring occasionally, until onions are very soft and starting to brown, about 20 minutes. Add mushrooms, salt and pepper; cook, stirring, until well browned, about 10 minutes. Add sherry; cook, scraping up browned bits, until no liquid remains. Add broth and 1/2 cup water; bring to boil. Reduce heat, cover and simmer for 10 minutes. Discard bay leaf. Meanwhile, sprinkle cheese over bread slices; broil on baking sheet until golden, about 3 minutes. Ladle soup into bowls; top with croutes. From Mom

Tips:

  • When making croutons, use day-old bread. This will help the croutons to be crispy and flavorful.
  • Cut the bread into small, even cubes. This will help them to toast evenly.
  • Toss the bread cubes with olive oil, salt, and pepper before baking. This will help them to brown and develop flavor.
  • Bake the croutons in a preheated oven at 400 degrees Fahrenheit for 10-15 minutes, or until they are golden brown and crispy.
  • Let the croutons cool completely before storing them in an airtight container.
  • Use croutons to add crunch and flavor to salads, soups, and casseroles.

Conclusion:

Croutons are a versatile and delicious addition to many dishes. They are easy to make and can be tailored to your own taste preferences. With a little creativity, you can use croutons to add a unique and flavorful touch to your favorite meals.
