4 tart green apples
½ cup brown sugar
4 tablespoons butter
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
  • Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

We live in South Carolina's Piedmont area, which is famous for huge apple orchards. This is one of my family's favorite apple recipes. I almost always make this to top off our traditional Sunday dinner.

1/2 cup chopped walnuts
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 cup packed brown sugar
1/4 cup raisins
6 tablespoons butter, melted, divided
4 medium baking apples
1 lemon, halved
4 short cinnamon sticks
3/4 cup apple juice

Steps:

  • In a blender or food processor, grind walnuts and sugar. Add cinnamon and set aside. Combine the brown sugar, raisins and 2 tablespoons of butter; set aside. Core apples and peel the top two-thirds of each. rub tops and sides with lemon; squeeze juice into centers. Brush apples with 2 tablespoons butter; press nut mixture evenly over peeled sides. Place in an ungreased 9-in. square baking dish. Fill apples with raisin mixture. Place a cinnamon stick in each apple; drizzle with remaining butter. Pour apple juice around apples. Bake, uncovered, at 375° for 40-50 minutes or until apples are tender. Cool 15 minutes before serving.

4 large baking apples, such as Honeycrisp
4 tablespoons (1/2 stick) butter, softened
1/2 cup brown sugar
3/4 teaspoon cinnamon
1/4 cup chopped pecans

Steps:

  • Preheat the oven to 375 degrees F.
  • Wash and core apples, leaving enough of the core at the base of the apple to contain the filling.
  • Combine the butter, brown sugar, cinnamon and chopped pecans in a small bowl. Roll log shapes of the mixture and press enough into each apple to fill the core.
  • Fill a 2-quart baking dish with about 3/4 cup water, or enough to cover the bottom. Place the apples upright in the dish. Bake until the apples are soft and the filling is browned, 1 hour.

1 teaspoon lemon juice
1/4 cup strawberry jam, jelly or preserves
2 tablespoon all-purpose flour
3 tablespoons butter, cold and diced
3 tablespoons brown sugar
1/2 cup oats, uncooked
1/4 teaspoon ground cinnamon
Pinch salt

Steps:

  • Preheat oven to 350 degrees F.
  • Cut each apple in half along its equator. Using a melon baller, cut out each side of the core, creating a rounded hole. Rub exposed apple flesh with lemon juice. Place 1 tablespoon of jam into each hole. For the topping: in a small bowl mix together flour, butter, brown sugar, oats, cinnamon and salt. Press this mixture on the top of each apple, covering jam. Place in a baking dish filled with about a 1/4-inch of water. Bake until top is golden brown and apple is tender, about 35 to 40 minutes.

2 medium apples (red are best, medium to large in size)
2 tablespoons raw sugar
2 tablespoons honey
4 dates
2 tablespoons sultanas
2 teaspoons mixed spice

Steps:

  • Preheat your oven to 180°C.
  • Follow the directions of my 'Hot Water Pastry' recipe, incorporating 2 tablespoons of sugar into the ingredients.
  • Divide the pastry into two balls. Roll out each ball into a circular shape, and place on two small or one large lightly oiled baking tray(s).
  • Peel the apples and use an apple corer to remove the cores.
  • Place each apple in the center of each circle of pastry.
  • Push a date down to the bottom of the hole in each apple.
  • Put a tablespoon of sultanas in each apple hole.
  • Put a tablespoon of honey in each apple hole.
  • Push a date into the top of each apple hole.
  • Sprinkle a teaspoon of mixed spice over each apple, followed by a tablespoon of raw sugar each.
  • Pull the pastry over the sides of each apple, patting the pastry together until the entire apple is covered, completely sealed with no gaps.
  • Bake in your 180C oven for 35-45 minutes, or until pastry is golden brown, and when a skewer penetrates into the apple without resistance.
  • Serve immediately with vanilla ice cream, double cream, or sour cream.

6 Bramley apples , halved through the middle and core removed
zest and juice 1 orange
1 tsp cinnamon
1 tbsp golden caster sugar
6 tbsp crunchy granola with almonds
cream or ice cream , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Pour the custard into a large baking dish. Toss the apples in the orange zest and juice, cinnamon and sugar.
  • Arrange the apples, cut-side up, on top of the custard and drizzle with any extra juice from the bowl. Sprinkle over the granola and bake for 30 mins, until the apples are soft and piping hot - cover after 20 mins if the granola is getting dark.
