CRUNCHY CARROT SLAW WITH GINGER SOY SAUCE

The lime & ginger give a nice tang to the salad. Be sure to grate crisp firm carrots or grate the carrots up to 3 hours ahead of time and place them in ice water in the fridge. Drain well in a colander before tossing with the dressing. Try this dressing on other salads too. I like to make my dressing several hours or the day before.

Tips:

  • Use a sharp knife or mandoline to thinly slice the carrots. This will help them absorb the dressing better and make the slaw more crunchy.
  • If you don't have a mandoline, you can use a vegetable peeler to create thin strips of carrot.
  • To make the dressing, whisk all of the ingredients together in a small bowl until well combined.
  • Add the dressing to the carrots and toss to coat. Be careful not to overdress the slaw, or it will become soggy.
