QUICK 'N' CRUNCHY GRANOLA

But remember you MUST STIR the granola after it bakes for 10 minutes. I didn't read the recipe carefully and burnt my first batch. Enjoy.;)

CRUNCHY GOLDEN TROPICAL GRANOLA

Crunchy Golden Tropical Granola image

I love tropical fruits for many reasons-they are sweet and juicy, have a luscious texture and fragrance, can be used in both savory and sweet dishes and they store well in the freezer. When tropical fruits are not in season, I buy them dried to make a granola that I can enjoy any time of the year. Coating the granola with finely ground banana chips is one way I ensure every bite has that punch of tropical flavor!

Provided by Food Network

Time 1h55m

Yield 7 cups

Number Of Ingredients 14

2 cups dried banana chips (6 ounces), broken by hand or chopped into small pieces
2 cups instant rolled oats (6.5 ounces)
2 ounces dried pineapple, roughly chopped into 1/4-inch pieces (1/2 cup)
2 ounces dried mango slices, roughly chopped into 1/4-inch pieces (1/2 cup)
2.5 ounces roasted unsalted macadamia nuts, roughly chopped into 1/4-inch pieces (1/2 cup)
1/2 cup unsweetened coconut chips (1 ounce)
1/4 cup toasted sesame seeds
1/2 cup unrefined coconut oil
1/2 cup pure maple syrup
1 1/2 teaspoons pure vanilla extract
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon kosher salt
Milk, yogurt, parfaits, smoothie bowls, ice cream or fruit salad

Steps:

  • Preheat the oven to 325 degrees F. Line a rimmed baking sheet with parchment paper.
  • Put half of the broken banana chips in a food processor. Process until finely ground to the consistency of breadcrumbs. Alternatively, crush the chips in a resealable plastic bag with a rolling pin. Set aside.
  • Combine the remaining broken banana chips with the oats, dried pineapple and mango, macadamia nuts, coconut chips and sesame seeds in a large heatproof bowl. Set aside.
  • Stir to combine the coconut oil with the maple syrup, vanilla extract, cinnamon, ground ginger and salt in a small saucepan. Cook over medium heat until just warm, about 2 minutes. Pour into the large bowl and stir to combine, ensuring everything is evenly coated. Sprinkle with the ground banana chips and stir again to evenly coat the granola.
  • Spread the granola on the prepared baking sheet in an even layer. Bake until evenly golden brown, 35 to 40 minutes, stirring 3 times (about every 10 minutes), to ensure it toasts evenly. Remove from the oven and let cool completely before storing.
  • Enjoy the granola as is, in milk or as a topping for yogurt, parfaits, smoothie bowls, ice cream or fruit salad.

CRUNCHY GRANOLA

Crunchy Granola image

This is a healthier trail mix-style granola with many crunchy clusters. The fat is lower than many recipes and it has lots of healthy grains, nuts and dried fruit.

Provided by Summerlea

Categories     Breakfast

Time 40m

Yield 8 1/2 c servings

Number Of Ingredients 11

4 cups old fashioned oats
3 tablespoons ground flax seeds
3 tablespoons wheat germ (oat bran, etc)
1/2 cup chopped almonds (substitute as desired)
1/2 cup chopped pecans
1/2 teaspoon salt
1/2 cup brown sugar
1/4 cup honey (maple syrup or corn syrup also work)
2 tablespoons vegetable oil
1 egg white (2-3T in volume)
1 cup dried fruit (berries, raisins, chopped apricots, etc)

Steps:

  • Heat oven to 300°F.
  • Mix oats, flax, wheat germ, almonds, pecans, salt and brown sugar in a large bowl. Wisk to combine the oil, honey and egg white, then pour over the oat mixture. Stir well until ingredients are evenly coated. It may seem too dry but keep stirring.
  • Spray oil on a jelly roll pan and add the granola mixture. Bake 20-30 minutes, until the edges are browned and it smells toasty. To make clumps don't stir during baking. Cool and allow the granola to harden. Break into smaller pieces and add the fruit. Store airtight for two weeks.
  • The dried fruit may hydrate the granola so it loses some of its crunch. If so just pop it back in a 300F oven for about 10 minutes.

My expanded version of Family Fun's recipe for 'Crunchy Granola' with a Middle Eastern flavor. Inspired also by a delicious breakfast we enjoyed last weekend for Mother's Day at a local restaurant and which was --Tasty Dish-- approved!

Yield 7 cups

Number Of Ingredients 18

1 cup Greek yogurt (approximately-we like Nancy's whole milk yogurt) or 1 cup plain yogurt (approximately-we like Nancy's whole milk yogurt)
rose water (I used about 1/2 teaspoon for 1 cup of plain yogurt) or orange blossom water, to taste (I used about 1/2 teaspoon for 1 cup of plain yogurt)
Agave or honey, for drizzling
4 cups rolled oats
1 cup wheat germ
1/2 cup chopped walnuts
1/2 cup slivered almonds
2 tablespoons pistachios
2 tablespoons sunflower seeds
1/4 cup sesame seeds
2 tablespoons maple syrup, and 2 tablespoons demerara or 1/4 cup brown sugar
1 teaspoon cinnamon
3/4 teaspoon ground cardamom
1/2 teaspoon salt
1/3 cup olive oil
1/4 cup raw agave syrup or 1/4 cup honey
1/3 cup filtered water
3/4 cup dried fruit (I added raisins, tart cherries, medjool dates and one tablespoon barberries to equal 3/4 cup.)

Steps:

  • Preheat the oven to 300 degrees.
  • In a large mixing bowl, stir together the oats, wheat germ, nuts, sesame and sunflower seeds, maple syrup/demerara or brown sugar, cinnamon, cardamom and salt.
  • Make a well in the dry ingredients and add the olive oil, agave or honey, and water. Toss the mixture until it is well combined, then spread it evenly on a cookie sheet.
  • Bake the granola until lightly browned, approximately 40 minutes, stirring every 10 minutes to keep the mixture from sticking.
  • Set aside to cool completely, then stir in the dried fruit.
  • Store left over granola in an airtight container in the refrigerator.
  • For 1 serving: Spoon yogurt into a serving bowl. Stir the rosewater or orange blossom water into the yogurt (start with a small amount then adjust).
  • Top yogurt with some of the granola (about 1/2 cup give or take) and add a light drizzle of agave or honey.
  • Enjoy!
