Time 30m

Number Of Ingredients 12

2 tablespoons olive oil
1 small onion (chopped)
1 green bell pepper (chopped)
2 cloves garlic (minced)
1 can sliced pimentos (4 oz) (drained)
1 can tomato sauce (8 oz)
2 cups uncooked long grain rice (washed and strained)
3 1/2 cups water
1 MAGGI® chicken bouillon cube
Pinch of achiote, annatto or turmeric powder to color the rice
1 bay leaf
12 ounces smoked chicken sausages (sliced (or 1 can Vienna sausages, cut in half))

Steps:

  • In a Dutch oven or saucepan, heat olive oil over medium-high heat. Add onion, green pepper, and garlic. Sauté for 5 minutes.
  • Add sliced pimentos and tomato sauce. Sauté for 1 minute. Add rice, water, bouillon cube, achiote and bay leaf. Bring to a boil.
  • Reduce heat to low. Cover and simmer until liquid is absorbed and rice is tender, about 15 minutes. DO NOT OPEN THE LID. The steam is what cooks the rice. After 15 minutes, remove from heat. Keep the lid on for another 5 minutes. Fluff with a fork.
  • While the rice is cooking, slice the canned Vienna sausages.
  • If making the chicken sausages, add 1/4 cup water to a hot skillet and cook sliced chicken sausages at medium heat, turning them frequently, for about 5-10 minutes until cooked through. Cook in batches, if using a small skillet.
  • Fold the sausages into the yellow rice. Serve immediately. Enjoy!

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 11

1/4 cup extra virgin olive oil
1/2 lb ham, chopped
1/2 cup sofrito sauce
1 sazon goya con culantro y achiote
15 1/2 ounces pink beans, undrained
2 cups rice, preferably long grain
2 cups chicken broth
1/2 cup roasted red pepper, chopped
1 bay leaf
1 teaspoon dried oregano, crushed
1 tablespoon green olives

Steps:

  • In a medium sized pot heat olive oil and add ham. Cook until browned.
  • Add sofrito and simmer over medium heat for 2 or 3 minutes.
  • Add all remaining ingredients, mixing thorougly.
  • Taste broth for reseasoning, if necessary. It should be very slightly on the salty side being that the rice will absorb most of the seasoning.
  • Cover. Cook over medium low heat for about 25 minutes. Stir, cover and cook for an additional 15 minutes.

Tips:

  • Use a combination of long-grain white rice and medium-grain yellow rice for the best texture.
  • Rinse the rice thoroughly before cooking to remove any starch.
  • Toast the rice in a little bit of oil before adding the liquid to help it absorb the flavors.
  • Use a flavorful broth or stock to cook the rice, such as chicken broth, vegetable broth, or even tomato broth.
  • Add some spices and herbs to the rice for extra flavor, such as cumin, coriander, oregano, or bay leaves.
  • Let the rice rest for a few minutes before serving to allow it to absorb all of the flavors.
  • Serve the rice with your favorite Cuban dishes, such as ropa vieja, picadillo, or black beans.

Conclusion:

Cuban yellow rice with Vienna sausages is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover rice. The combination of the flavorful rice, the savory sausages, and the sweet peas makes for a truly satisfying meal. Give this recipe a try and you won't be disappointed.
