Steps:
- Thinly slice the shallot and place half in a bowl. The remainder can be fried and used as a garnish, if you like (see below). Add the mushrooms, spring onions and chilli to the bowl, then cover and leave in the fridge until ready to serve.
- Just before serving, slice the cucumber into long, thin strips (try using a vegetable peeler to get really thin slices). Toss together with the remaining salad ingredients. Mix together all the dressing ingredients, leave to one side for 5 mins to let the sugar dissolve, then toss half the dressing through the salad. Place in a serving dish and top with the remaining dressing and fried shallots, if you like.

MARINATED ENOKI SALAD
I love mushrooms! I have to try them all! I got some enoki mushrooms and thought they tasted peppery for a mushroom. I paired them with purple cabbage in this tangy and crunchy oriental salad. I hope you enjoy!

Tips:
- Choose fresh and crisp cucumbers: Look for cucumbers that are firm and have a deep green color. Avoid cucumbers that are soft or have yellow spots.
- Use thin enoki mushrooms: Thin enoki mushrooms are more tender and delicate than thick ones. If you can only find thick enoki mushrooms, you can cut them in half lengthwise.
- Rinse the enoki mushrooms thoroughly: Rinse the enoki mushrooms under cold water to remove any dirt or debris.
- Use a sharp knife to slice the cucumbers: A sharp knife will help you get thin, even slices of cucumber.
- Add the dressing just before serving: The dressing will help to keep the salad fresh and crisp. If you add it too early, the salad will become watery.
Conclusion:
Cucumber enoki salad is a refreshing and delicious salad that is perfect for a light lunch or dinner. It is also a great way to use up leftover cucumbers and enoki mushrooms. With its simple ingredients and easy-to-follow instructions, this salad is sure to become a favorite in your household.
