Time 1h50m

Yield 4 servings

Number Of Ingredients 13

8 strips thick-cut bacon
Two 8-ounce boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
Neutral cooking oil, for greasing
4 large eggs
6 ounces ranch dressing
1 1/2 ounces sherry vinegar
1 tablespoon minced fresh chives
1 head iceberg lettuce, cored and cut into bite-size pieces
1 English cucumber, seeded and small diced
2 large tomatoes, small diced
1 avocado, sliced
1/4 cup blue cheese crumbles

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bacon slices on a rimmed sheet tray in a single layer and bake until the bacon is crispy, about 20 minutes. Allow to cool to room temperature, then crumble. Reserve until ready to build the jars.
  • Sprinkle the chicken breasts with salt and pepper. Put on an oiled quarter-sheet tray and roast until cooked through and browned, about 30 minutes. Allow to cool to room temperature, then chop into bite-sized pieces. Reserve until ready to build the jars.
  • Put the eggs in a small saucepan and just cover with water. Put on the stovetop over medium-high heat and bring to a boil. Once at a boil, turn off the heat and let sit for 11 minutes. Remove the eggs from the water and let cool to the touch. Remove from the shells and cut in half lengthwise. Reserve until ready to build the jars.
  • Mix the ranch dressing, sherry vinegar and chives in a small bowl. Reserve, chilled, until ready to build the jars.
  • Carefully build layers in each of four 32-ounce mason jars, starting with the iceberg in the bottom of each jar. Evenly divide the eggs, yolk sides facing out, among each jar. Divide the bacon crumbles, cucumber, tomatoes, avocado slices, chicken, blue cheese and ranch dressing among the jars.
  • Cover with lids and keep cold until ready to eat. Simply shake the jars to "toss" the salads and either serve on chilled plates or eat directly out of the jars.

This is a very easy side salad for a picnic or covered dish event. My mom kept this going in our frig all summer. I think she got the cucumbers from an aunt and uncle that had a farm nearby.

REFRIGERATOR CUCUMBER SALAD

Refrigerator Cucumber Salad image

A Perfect dish for those hot summer days when you have too many cucumbers to deal with and not enough time!

Categories     Vegetable

Time 15m

Yield 3 cups, 4 serving(s)

Number Of Ingredients 6

2 medium cucumbers, thinly sliced (I peel them slightly)
2/3 cup white vinegar
2/3 cup water
3 tablespoons sugar
salt and pepper
1 tablespoon dried dill weed

Steps:

  • Lightly peel cucumbers, less perfect is ok! Thinly slice and place in a colander. Liberally cover with salt, shake up and place more. Place colander in a sink or on a towel as the salt will make the cucumbers "leak" any moisture. Leave them like this for at least an hour.
  • In a jar or dish mix together water, vinegar, sugar and dill - a dash of salt and pepper is good too. Add cucumbers, with OUT rinsing them. Store in fridge overnight.
  • YUM!

Tips:

  • Choose the right cucumbers: For the best results, use fresh, firm cucumbers that are free of blemishes. English or Persian cucumbers are ideal for this recipe.
  • Slice the cucumbers evenly: This will help them pickle evenly. You can use a mandoline or a sharp knife to slice the cucumbers.
  • Use a clean jar: Make sure the jar you use for pickling is clean and sterilized. This will help to prevent the growth of bacteria.
  • Pack the cucumbers tightly into the jar: This will help to create a brine that is flavorful and evenly distributed.
  • Use a good quality vinegar: The type of vinegar you use will affect the flavor of the pickles. For a classic flavor, use white vinegar. For a more complex flavor, try using apple cider vinegar or rice vinegar.
  • Add your favorite spices: You can add any spices you like to the pickling brine. Some popular choices include dill, garlic, peppercorns, and mustard seeds.
  • Let the pickles rest: After you have made the pickles, let them rest for at least 24 hours before eating. This will allow the flavors to develop and mellow.

Conclusion:

Cucumber salad in a jar is a delicious and refreshing side dish that is perfect for summer gatherings. It is easy to make and can be customized to your liking. With a few simple ingredients and a little bit of time, you can enjoy a delicious and healthy snack or side dish that will be enjoyed by everyone.
