1/4 cup mayonnaise (CAN ADD MORE IF NEEDED)
1 medium cucumber, peeled seeded, finely chopped

  • Press the cucumber through a colander to remove excess moisture.
  • Process cream cheese and mayonnaise in a blender or food processor until smooth.

1 pound peeled, deveined medium shrimp
1/2 cup thinly sliced red onion
3 tablespoons fresh lemon juice, plus 2 teaspoons grated lemon zest
2 tablespoons rinsed capers
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 cup thinly sliced English cucumber
2 packed tablespoons chopped fresh dill
1/2 cup Neufchatel
4 slices pumpernickel sandwich bread, lightly toasted
4 hard-cooked eggs, sliced

Steps:

  • Add shrimp to a pot of salted boiling water. Return just to a boil, then transfer shrimp to an ice-water bath. Drain well; slice in half lengthwise.

2 slices rye bread (or a round sandwich roll)
2 -4 slices cucumbers
2 -4 slices beefsteak tomatoes (or other large ripe tomato)
2 slices red onions
1/2 avocado, peeled and thinly sliced
lemon juice
alfalfa sprout (optional)
2 teaspoons honey mustard, to taste,or honey mustard salad dressing
1 -2 leaf green leaf lettuce

Steps:

  • Lightly toast bread or roll.
  • Toss avocado slices with a tiny bit of lemon juice to keep from getting brown.
  • Spread some of the honey mustard on the bread.

  • Peel the cucumber and cut in chunks. If it's got a lot of big seeds, scoop some out and discard. Put it in a food processor and chop fine. If it's really moist, or you didn't seed it, then you may want to squeeze off some of the excess juice.
