Steps:

  • Preheat oven to 400.
  • Using an Apple/Peeler/Corer/Slicer, core and slice potatoes to create long spirals.
  • Slice “cores” into ¼” rounds.
  • Place potatoes in a shallow baking dish that has been lightly sprayed.
  • Melt butter with garlic.
  • Drizzle mixture over potatoes.
  • Sprinkle with what ever seasonings you like.
  • Examples: grated Parmesan cheese, and finely chopped green onions or garlic salt and pepper or even some of Emeril’s essence.

Kosher salt
1/2 cup all-purpose flour
2 teaspoons paprika
1 teaspoon seasoned salt

  • For the potatoes: Spiralize the potatoes into fries and soak in water in a container for 1 hour in the refrigerator.
  • For the batter: Combine the flour, paprika, seasoned salt, cayenne, some salt and pepper and 1 cup water in a large pitcher and pour into a large resealable plastic bag.
  • Drain the fries and pat dry. Put them in the bag with the batter and massage to make sure they are coated thoroughly with it. Set aside for 30 minutes so the fries can absorb all the flavors.
  • Heat about 3 inches of oil in a heavy-bottomed pot over medium heat to 365 degrees F.
  • Cook the fries in batches until golden and crispy, about 2 minutes per batch. Drain on a paper towel-lined plate, sprinkle with salt and serve immediately.

2 medium Yukon potatoes
¼ cup butter, melted
1 cup grated parmesan cheese, plus more for serving
½ teaspoon black pepper
1 tablespoon garlic powder

Steps:

  • Preheat the oven to 325ºF (160ºC).
  • Microwave the potatoes for 1-1 ½ minutes, then leave in the microwave for a few minutes to cool down and soften. Insert a wooden skewer into the bottom of each potato and gently push it all the way through the top. Working in a spiral motion from one side to the other, hold a sharp, thin knife at an angle and cut in the opposite direction you are turning the skewered potato, cutting all the way down to the skewer.
