Chocolate Sandwich Cookies image

These cookies look a little like Oreos or possibly moon pies. They're more like Oreos in flavor, only a bit softer and they don't have that weird chemical burn Oreos can have - they taste of chocolate cookies and creamy filling.

1/2 c butter, softened
1 c sugar
1 large egg
1 tsp pure vanilla extract
1 1/4 c flour
1/2 c cocoa powder
3/4 tsp baking powder
1/4 tsp salt
FILLING
3 Tbsp butter, softened
2 1/2 c powdered sugar
2 Tbsp milk
1 tsp pure vanilla extract

Steps:

  • 1. Cream together butter, sugar, egg and vanilla until light and fluffy.
  • 2. Add flour, cocoa, baking soda and salt all at once. Mix until just well combined.
  • 3. Divide dough in half. Shape each half into a 1 inch diameter roll and wrap in plastic wrap or waxed paper. You may need to refrigerate it a while to make it easier to shape.
  • 4. Refrigerate 4 hours or overnight until it's firm enough to slice. Heat oven to 375.
  • 5. Slice rolls 1/8 inch thick and place slices about 2 inches apart on an ungreased cookie sheet. They'll spread a little more than you may expect - don't place them too close together.
  • 6. Bake 8-10 minutes at 375. Remove cookies from pan and cool completely on a wire rack.
  • 7. For filling, beat together all ingredients until uniform.
  • 8. Make sandwiches of the cookies, either by spreading a bit of filling on the bottom of one cookie then sticking it to the bottom of another or by squishing a small marble size ball of filling between the two.
  • 9. Store the cookies covered in the fridge, since the creamy filling contains butter and is perishable.
