1 large russet potato, peeled and cut into 1-inch cubes

Steps:

  • Melt the butter in a large pot or Dutch oven over medium heat. Add the leeks, celery and carrot and cook, stirring occasionally, until the vegetables have softened but not browned, about 10 minutes.
  • Add the ginger, garlic, thyme, curry powder and potato. Cook, stirring, until the potato is coated in the spices, 1 to 2 minutes. Add the chicken broth, 2 cups water and the sugar and bring to a boil. Add the corn, then reduce the heat to medium low and simmer until the vegetables are tender, about 25 minutes. Add the heavy cream and continue cooking until warmed through, about 5 more minutes. Remove from the heat and let cool slightly.
  • Working in batches, transfer the soup to a blender and puree until smooth; return to the pot. Season with salt. Strain through a fine-mesh sieve into a saucepan and reheat if needed. Serve with toppings.

  • If using fresh corn, shuck the ears and discard the husks and corn silk. Bring enough water to a boil to cover the corn cobs when they are added. Drop the corn into the water. When the water returns to a boil, cover and remove from the heat. Let stand five minutes and no longer. Drain the corn and let cool.
  • Cut and scrape the corn from the cobs. There should be about four and one-half cups.
  • Heat four tablespoons of the butter in a skillet and add the yellow, red and green peppers. Cook, stirring, about one minute. Sprinkle with the curry powder and cook, stirring, about 30 seconds. 2 teaspoons olive oil

2 cloves garlic, minced
1 pinch cayenne pepper, or to taste

¼ teaspoon garam masala
3 tablespoons plain Greek yogurt, or more to taste
2 teaspoons chopped fresh chives

Steps:

  • Husk the ears of sweet corn and stand an ear upright in a skillet with the top pointing up. Use a sharp kitchen knife to slice off the kernels, working from top to bottom and rotating the ear after each cut. Use the back of the knife to scrape extra juices into skillet. Repeat with remaining ear of corn.
  • Drizzle olive oil over the kernels and sprinkle with salt; place over medium heat and cook until corn is hot, about 3 minutes. 1/8 teaspoon ground turmeric
2 1/4 cups corn kernels (about 4 ears)
3 cups nonfat buttermilk
3/4 teaspoon coarse salt

Steps:

  • Heat oil in a medium saucepan over medium heat. Add onion, poblano chile, and garlic; saute until onion is soft and translucent and chile and garlic are tender and fragrant, about 5 minutes.
  • Add coriander, cumin, and turmeric, and cook until they are toasted and fragrant, about 2 minutes. Add corn, and saute until kernels are lightly browned, about 5 minutes. Remove from heat, and let cool slightly.
  • Transfer 1 1/2 cups corn mixture to the bowl of a food processor fitted with the metal blade, and add buttermilk and salt; puree until mixture is smooth. 6 ears corn
3 tablespoons unsalted butter, divided use
1/2 cup finely chopped onion
1 small jalapeno pepper, halved, seeded and finely chopped (about 2 1/2 teaspoons)
2 teaspoons finely chopped garlic
2 teaspoons Madras curry powder
1/2 cup heavy cream
coarse salt
fresh ground white pepper
1/4 cup chopped cilantro leaf

Steps:

  • Trim the stalk end of 1 ear of corn to enable you to stand it on end securely. Stand cob on cutting board and set blade of a very sharp chef's knife at a slight angle at top of cob, where kernels meets cob. Draw knife down along cob, detaching kernels. Work your way around the cob, repeating until all kernels are removed. Repeat with remaining cobs. You should have about 4 cups of kernels.
  • Melt 2 tablespoons butter in wide, deep sauté pan set over low heat. Add onion and sauté 5 minutes.
  • Add jalapeno and garlic, stir, and cook 2 more minutes. Add curry powder, stir to coat other ingredients, and continue cooking 2 minutes.
  • Add corn, stir well, and continue cooking 3 minutes more. Stir in cream, season with salt and pepper, and let cook until slightly thickened, 2 to 3 minutes.

3 tablespoons chopped onion
2 tablespoons chopped sweet red pepper
2 tablespoons chopped green pepper
3 tablespoons butter
2 cans (11 ounces each) Mexicorn, drained
3/4 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup sour cream

Steps:

  • In a small skillet, saute onion and pepper in butter. Add the corn, curry powder, salt and pepper. Cook over low heat until vegetables are heated through. Stir in sour cream. Cook 1 minute longer or until heated through.

1 medium sweet onion, diced
2 Tbsp olive oil
2 clove garlic, minced
2 large yukon gold potatoes, peeled and diced (14 oz)
1 large sweet potatoes, peeled and diced (1 lb)
2 c fresh corn kernels, about 5 ears
1 can(s) chicken broth (14 oz)
1 can(s) light coconut milk, unsweetened (13.5 oz)
2 tsp curry powder
1 tsp salt
1/4 tsp black pepper
1 lb large shrimp, fresh, peeled and deveined, tails removed
GARNISHES: (OPTIONAL)
toasted coconut
green onions, diced
roasted peanuts, coarsely chopped

Steps:

  • 1. Sauté onion in hot oil in a Dutch oven over medium heat 5 minutes or until tender; add garlic, and sauté 1 minute.
  • 2. Add Yukon gold potatoes and next 7 ingredients; bring to a boil, stirring often. Reduce heat, and simmer, stirring occasionally, 25 minutes or until potatoes are tender.
  • 3. Stir in shrimp; cook 4 to 5 minutes or just until shrimp turn pink. Season with salt and pepper to taste. Serve with desired toppings.

We love to eat curry any way we can. I came up with this recipe in the summer time using fresh corn on the cob but then adjusted it to use frozen sweet corn so it can be made year round. 1 pkg frozen corn, thawed
1 large red bell pepper, chopped
1 bunch green onions, chopped
1/3 c mayonnaise
1/3 c sour cream
3 Tbsp cilantro, chopped
1 Tbsp mango chutney
1 tsp curry powder
1/2 tsp salt
1/2 tsp black pepper
4 avocados

Steps:

  • 1. In a bowl, combine mayonnaise, sour cream, mango chutney, curry powder, salt, and black pepper. Stir well.
  • 2. Add corn, red bell pepper, and red onion. Stir to coat.
  • 3. Cut avocados in half and salt and pepper to taste. Scoop even amounts of the mixture into each avocado half and sprinkle with cilantro. Enjoy!
  • 4. ***The idea is to eat them sort of like a grape fruit. Scoop down into the avocado and pull up some of the flesh along with the curried corn salad. YUM!***
