This is like Spanish Rice, but includes cheese and makes for more protein. kids love it. There is another version with chicken. Just saute about a pound of boneless, chopped chicken breasts, then proceed with the recipe. At the end, instead of baking, leave everything in the saute pan, add the rest of the sauce and the cheese. Then cover the pan and let it sit until the cheese melts.

1/4 cup butter or 1/4 cup margarine
1 medium onion, chopped (3/4 cup, approx.)
1 garlic clove, minced
1/2 green pepper, chopped
1 cup rice, uncooked
1 (15 ounce) can tomato sauce
1 teaspoon salt
pepper
1 1/2 cups grated cheese (cheddar, jack, etc.)
1 1/2 cups boiling water

Steps:

  • Saute onion, garlic, green pepper and rice in the butter until lightly brown.
  • Add all but 1/2 cup of tomato sauce.
  • Then add boiling water, salt& pepper.
  • Simmer, covered, until liquid is absorbed (about 20 minutes.).
  • Line a greased casserole dish with half the mixture.
  • Sprinkle 1 cup of cheese, then add the rest of the tomato sauce.
  • Add the rest of the rice and the last of the cheese.
  • Bake at 400 degrees for 15 minutes.

1 cup long-grain rice
1 cup tomatoes, cubed, peeled
1 cup onion, chopped
1 tablespoon chicken stock powder
1 teaspoon curry powder
2 cups water
50 g butter
1/3 cup celery, chopped
1/3 cup red capsicum, chopped (a mix of the vegetables to total one cup)
1/3 cup green pepper, chopped (a mix of the vegetables to total one cup)

Steps:

  • Mix all ingredients together and put into a buttered casserole dish with a tight fitting lid.
  • Bake at 180 C 1 to 1 1/4 hours, stirring after 30 minutes.
  • This can be all mixed together and left to stand until you are ready to cook it.
  • If fresh tomatoes are not available or convenient use canned, replace some to the water with the juice from the can. (I think it has a better flavour using canned).

2 onions , chopped
1 tbsp oregano leaves (or 1½ tsp dried), plus a few extra
1 tbsp olive oil
250g easy-cook long grain rice
1l hot vegetable stock
2 avocados , sliced
about 3 small bunches mixed soft herbs (we used chives, parsley and mint)
1 baby cos lettuce , shredded
juice 1 lemon
200g mature cheddar , grated

  • Heat oven to 200C/180C fan/gas 6. Spread the tomatoes on a baking tray and roast for 15 mins, then remove. Heat grill to High.
  • Meanwhile, soften the onion and oregano in the oil, stir in the rice and stock, and boil for 15 mins, stirring occasionally, until the rice is cooked.
  • Mix the avocados, herbs, shredded lettuce and lemon juice.
  • Stir most of the cheese and tomatoes into the rice, tip into an ovenproof dish, scatter remaining cheese and tomatoes on top with some more oregano and flash under the grill to brown. Spoon onto plates with the salad served on the side.

1 small yellow onion, finely chopped (about 1 cup)
1 small Indian green chile or Serrano chile, finely chopped
