4 tablespoons butter
2 garlic cloves, minced
1 medium onion, chopped
1 teaspoon fresh ginger, grated
1/2 teaspoon curry powder (or more to taste)
1 lb sweet potato, peeled and diced
1 cup vegetable stock or 1 cup chicken stock
3 cups milk
salt & freshly ground black pepper
1/4 cup cream or 1/4 cup coconut milk
fresh cilantro or scallion, minced

Steps:

  • In a large saucepan sauté onion, garlic, ginger and curry in butter over medium heat until onion is softened, about 5 minutes. Add the sweet potato and cook 1 or 2 minutes without browning. Add the stock and cover. Cook about 10 minutes, until tender.
  • Puree the soup with an immersion blender, if available. If not pour solids into a regular blender and puree. Return to pot and thin with milk. Only add enough milk until soup reaches desired consistency.
  • When ready to serve, ladle soup into serving bowls. Swirl in a tablespoon of cream or coconut milk into each bowl. Sprinkle a pinch of fresh minced cilantro or minced scallion on top.

2 teaspoons oil
1/2 cup onion, finely diced
1 garlic clove, crushed
1 teaspoon curry powder (your prefered brand)
2 cups chicken stock
475 g kumara, mashed
1/4 cup light sour cream
1/2 cup fresh coriander, finely chopped (Cilantro)

Steps:

  • Heat oil in saucepan over low heat. Add onion, garlic and curry powder cook, stirring, for 2 minutes.
  • Add stock and mash and bring to the boil, stirring until smooth. Reduce heat and simmer for 10 minutes.
  • Add sour cream and coriander and season to taste with salt and pepper.
  • Served with warmed naan bread if desired.

4 sweet potatoes, scrubbed
2 tablespoons olive oil, plus 1/2 cup to finish
4 teaspoons coriander seeds, toasted and cracked
2 teaspoons lemon zest, from 2 lemons
2 teaspoon flake salt
2 tablespoons fresh Italian parsley leaves, roughly chopped, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sweet potatoes on a rimmed baking sheet. Pierce the potatoes a few times with the tip of knife and rub with 2 tablespoons olive oil. Roast, flipping halfway through, until the sweet potatoes are soft all the way through, about 1 hour. Remove from the oven and allow to sit for 5 minutes.
  • Cut the potatoes in half and fluff the inside with a fork. Drizzle each half with a tablespoon of olive oil. Sprinkle each half with a few coriander seeds, lemon zest and flake salt. Sprinkle with the parsley leaves to finish if desired.

1 medium onion, chopped
3 medium garlic cloves, peeled
1 (32 ounce) carton chicken stock
1 teaspoon curry paste
1 tablespoon yellow curry powder
1 (14 ounce) can diced tomatoes with green chile peppers
½ cup chopped fresh basil
1 tablespoon freshly grated ginger
1 teaspoon salt, or more to taste
½ (14 ounce) can coconut milk
