1 tablespoon sweet curry powder
2 tablespoons vegetable oil
2 tablespoons lemon juice, divided
4 quarts water (for boiling pasta)
1 teaspoon salt
1 lb dry pasta
2 cups snap peas, chopped in half
1/2 cup minced red onion
2/3 cup low-fat mayonnaise
1 tablespoon dijon-style mustard

Steps:

  • Combine curry, oil, and 1 T lemon juice, pour over chicken, toss to coat, cover and refrigerate 1-2 hours.
  • Heat large nonstick skillet over med heat, add chicken.
  • Cook, stirring regularly, about 3 min (or more). Reduce the heat a bit if the sauce starts to darken.
  • Remove the pan from the heat, let cool while the pasta boils.
  • Boil pasta in salt and water, rinse and set aside. For about the final 2 min of cooking time, add the peas, drain and rinse w/rest of pasta.
  • While pasta cooks, prepare the salad dressing. It is important to have dressing done at same time as pasta, so pasta doesn't sit w/out dressing too long, as it will clump.
  • In a large bowl, blend minced red onion, mayonnaise, mustard and 1 T lemon juice.
  • Add the curried chicken w/all the sauce out of the pan; whisk to blend.
  • Add pasta and peas, toss to coat and add salt if desired.

However, I used this recipe for camping, since the only thing that needed refrigeration was the frozen pasta, and if you choose to use dried pasta, it would be even more camping friendly. This dish is vegetarian friendly because you do not need to use pasta stuffed with meat. You may wish to double the sauce recipe and eat it with crusty bread to dip. Yummy! Time to make is an estimate.

1 (14 ounce) can chicken broth or 1 (14 ounce) can beef broth
1/2 cup butter, divided in half (1 stick)
2 tablespoons curry powder (or more)
1 (14 ounce) package pasta (I used frozen ravioli)
1 (14 ounce) can unsweetened coconut cream (milk)
crusty bread, to dip (maybe french bread?) (optional)

Steps:

  • Start sauce first, as it needs to simmer to thicken.
  • Pour the can of broth into a medium sized pot and start simmering it.
  • Carefully add 1/2 stick of butter, cut into chunks. Stir until melted.
  • Add the curry powder, whisking to make sure there are no lumps.
  • Sample the sauce to see if the flavor suits you or if you need to add more curry powder.
  • In a separate pot, start making the pasta according to the package directions. Drain when done and add the remaining butter, stirring to coat.
  • When the sauce has simmered for 5 or 10 minutes, carefully add the coconut cream.
  • Sample the sauce again to be sure the flavor is right for you. Notice how the coconut cream enhances the curry flavor without diluting it-mmmm!
  • Continue simmering the sauce, whisking occasionally, until it reaches the thickness you desire, or until you cannot stand waiting any longer.

4 red bell peppers, seeded and diced
3 fresh curry leaves
1 pound cubed skinless, boneless chicken
1 tablespoon ginger garlic paste
1 teaspoon ground turmeric

¼ cup water
1 (2 ounce) package coconut milk powder
1 cup water
1 (16 ounce) package spaghetti
3 green chile peppers, sliced into thin rings
½ cup chopped fresh cilantro
1 lemon, cut into thin slices

Steps:

  • Heat a small skillet over medium heat. Add the chickpea flour and cook, stirring frequently, until the flour darkens slightly and smells fragrant, about five minutes. Remove the pan from the heat and pour the toasted chickpea flour into a bowl to cool.
  • Heat a nonstick skillet over medium-high heat. Add the red bell peppers and curry leaves and cook for 2 minutes, stirring constantly. Mix in the cubed chicken and cook, stirring frequently, until no longer pink, about 5 minutes. Stir in the ginger-garlic paste and fry for 30 seconds.

1 1/4 cups chicken stock
2 tablespoons tomato paste
1/3 cup raisins
1/3 cup plain yogurt
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup chopped fresh parsley
1/4 cup chopped peanuts or 1/4 cup almonds, toasted

Steps:

  • In skillet, heat oil over medium-high heat; saute garlic and onion for 2 minutes or until softened.
  • Add curry powder, paprika and ginger; cook stirring, for one minute.
  • Add chicken; saute for 3 minutes or until lightly browned.
  • Stir in 1/4 cup chicken stock.
  • Cook for one minute or until liquid has evaporated.
  • Add remaining stock& tomato paste and bring to a boil.
  • Reduce heat and sprinkle with raisins; simmer for 5 minutes or until chicken is no longer pink inside.
  • Remove from heat; stir in yogurt, salt and pepper.
  • Top with nuts and parsley.
  • Serve over penne or spagetti.

Here in New Orleans there was this great pasta restaurant, Semolina's. They had this great dish, Curry Chicken. I think the place is gone now, so I wanted to recreate that scrumptious dish that I always enjoyed there so many times. Here is my version.

3 boneless, skinless chicken breasts
3 tsp curry powder
2 Tbsp vegetable oil
1 large yellow onions
2 tsp minced garlic
4 carrots, shredded
1 c shredded, sweetened coconut
1 c milk
1 c half and half
3 c chicken broth
1 c raisins
1 lb linguine, cooked

Steps:

  • 1. In a small pot combine milk, half & half, and coconut. Cook over low heat until thickened.
  • 2. Cut chicken breasts into 1 inch cubes, place in a bowl.
  • 3. Sprinkle three teaspoon of curry powder over chicken pieces and toss to coat pieces evenly.
  • 4. Heat vegetable oil in a large skillet. When smoking hot, add coated chicken pieces. Cook until browned.
  • 5. Add sliced onion, carrots, and garlic to chicken. Stir and cook until softened.
  • 6. Add three cups of chicken broth, bring to a boil.
  • 7. Add coconut and milk mixture.
  • 8. Add raisins and stir.
  • 9. Turn down heat to low and cook until thickened. You may add more curry powder now if you prefer more. I did add a little more.
  • 10. Cook linguine according to package directions. Then toss with curry chicken sauce and enjoy.

SHIRMP - as many as you want (the bigger the better - probably about 3 giant per person), 6 smaller ones p/p
PEANUT OIL enough to brush on shrimp
SMOKEY Paprika - or other smokey seasoning to sprinkle on shrimp
SHITAKE MUSHROOMS - handful of caps
CHERRY TOMATOES - 6 - 8 cut in half
SQUID INK PASTA- half a package
RED CURRY PASTE - tablespoon +/-
COCONUT MILK - one can +/-
FISH SAUCE 1 tablespoon
BROWN SUGAR 1 tablespoon
BONITO FISH FLAKES- 1 mini package or handful
CILANTRO - 1 sprig for garnish if desired

Steps:

  • Boil large pot of water for pasta MEANWHILE SHIRMP - Thread shrimp on to skewers Brush Shrimp w/peanut oil Sprinkle with smokey paprika or other smokey flavoring Broil til pink Turn skewers, sprinkle with more flavor if necessary and broil til lightly singed (you can also grill on an open flame) CURRY - Put curry paste into a small wok or sauce pan and heat on medium high Add coconut milk, simmer and whisk to incorporate curry - should turn milk pink (NOTE - you can add more or less curry paste and coconut milk to taste) As it bubbles, add the fish sauce and brown sugar, continue incorporating, simmer down to reduce - it should be thick rather than soupy Slice shitake mushrooms into 1/4" slivers and add them along with the tomatoe halves into the curry - simmer another few minutes Once the pasta water boils, add the squid ink pasta. Follow directions on package but most need only about 3 minutes to boil. Al dente is better than mushy ASSEMBLE Drain pasta in collander, stop cooking with cold water, drain again. Pile pasta in a high mound in the middle of a serving plate with a lip or shallow bowl. Arrange shrimp in a circle on top of /around the base of the pasta pile Pour the curry over the pasta and puddle around shrimp. Sprinkle bonito fish flakes on top of the pasta/shrimp plate and add the cilantro sprig if desired. ENjoy - eat with chopsticks if you have 'em

3 cups torn salad greens
2 cups shredded carrots
2 cups frozen sweet peas, cooked, drained
2 medium tomatoes, chopped (1 1/2 cups)
1 1/2 cups mayonnaise
1 teaspoon curry powder
1/2 cup sliced almonds, toasted

Steps:

  • Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • Drain pasta; rinse with cold water. Shake to drain well.
  • Meanwhile, in 4-quart glass salad bowl or 13x9-inch glass baking dish, layer salad greens, carrots, peas and tomatoes.
  • In large bowl, stir together seasoning mix, mayonnaise and curry powder; stir in pasta. Spread pasta mixture over vegetables in salad bowl. Just before serving, sprinkle with almonds. Serve immediately, or refrigerate up to 2 hours before serving.

THAI GREEN CURRY PASTA RECIPE

Pasta Shells - 1/2 box
Coconut Milk - 1 can
Thai Green Curry Paste - 3-4 tbsp, I use Thai Kitchen Green Curry paste.
Peanut Butter - 1 tbsp
Soy Sauce - 2 tbsp
Sriracha or chili paste - 1 tbsp, optional
Onion - 1 small, diced
Garlic - 3 cloves, chopped
Ginger - 1 tsp minced
Mushroom - 1 box, sliced
Carrot - 1/2 large carrot chopped
Cilantro - chopped, for garnish
Oil
Salt

Steps:

  • Boil the pasta till al dente. In the last 1 minute of cooking, add the carrots to the pasta water and boil. Reserve 1/4 cup of the pasta water. Drain the shells and carrots. To the coconut milk, add the green curry paste, peanut butter, soy sauce and sriracha. Mix well. Heat a pan and add some oil. To the oil, add the onion, garlic and ginger, saute till onions are translucent. Then add the mushrooms and saute on high for 3 minutes. Pour the coconut milk-green curry mixture over the mushrooms. Then add the reserved pasta water. Let it come to a boil. Then reduce heat and simmer 5 minutes. Taste and adjust salt. To serve, pour the green curry over pasta and carrots. Garnish with chopped cilantro or scallions. Peas, baby corn, broccoli or bamboo shoots will also work very well in this recipe.

SEAFOOD PASTA WITH CURRY CREAM SAUCE



Seafood Pasta with Curry Cream Sauce image

8 cups boiling water
1 1/2 teaspoons vegetable oil
1/4 teaspoon salt
12 ounces fresh linguini
2 tablespoons olive oil
1 tablespoon unsalted butter
1 tablespoon fienly chopped red onion
1 tablespoon finely chopped garlic
1 tablespoon finely chopped peeled fresh ginger
1 cup Coconut Milk
1 1/2 tablespoons Thai fish sauce
1 tablespoon curry powder
1 teaspoon white pepper
1 cup whipped cream
8 Manila or littleneck clams cleaned
8 medium shrimp (21 to 25 per pound) shelled and deveined
4 large snow crab claws
4 mussels scrubbed and debearded
2 tablespoons finely diced tomatoes
4 sprigs cilantro (garnish)

Steps:

  • Bring water to boil in a stockpot with vegetable oil and salt. Drop in pasta and boil until al dente, about 1 1.2 to 2 minutes. Drain. Meanwhile, heat olive oil and butter in a large saucepan over high heat. Add onions, garlic, and ginger and stir until garlic is lightly browned, about 1 minute. Add coconut milk, fish sauce, curry powder, and pepper and bring to boil, stirring constantly. Add cream and return to boil, stirring. Add all seafood, reduce heat to low, and simmer 7 minutes, stirring every minute. Remove seafood from curry sauce and transfer to a large bowl. Add cooked pasta to sauce and toss to coat. Transfer pasta to a platter and arrange seafood over it. Top with tomatoes, garnish with cilantro, and serve.
