1/2 cup chopped pecans
1 (16 ounce) container sour cream

This is a wonderful and easy fruit salad that is also pretty for special occasions or holidays.

1 (20 ounce) can pineapple chunks, juice reserved
2 apples, peeled and cored
1 (21 ounce) can peach pie filling
2 bananas, peeled and diced
3 kiwis
1 pint strawberries

Steps:

  • In a small bowl, toss the chopped apples in reserved pineapple juice. Allow to sit for 5 to 10 minutes.
  • In a large salad bowl, combine the peach pie filling and pineapple chunks.
  • Remove apples from pineapple juice and add to pie filling and pineapple mixture. Add chopped bananas to reserved pineapple juice and let sit for 5 to 10 minutes.
  • Peel and slice kiwi and 1/2 of strawberries. Chop the other 1/2 of strawberries and set aside.
  • Remove bananas from pineapple juice and add to pie filling mixture. Add chopped strawberries; toss together.
  • Arrange kiwi slices around the edge of the serving bowl and alternate with strawberry slices. Chill and serve.

3 (3 ounce) packages strawberry flavor gelatin
3 cups boiling water
2 bananas, ripe
1 (16 ounce) package frozen whole strawberries, sliced
1 (20 ounce) can crushed pineapple, undrained
1 (8 ounce) package cream cheese, softened
1 cup sour cream or 1 cup plain yogurt
1/4 cup sugar

Steps:

  • in large bowl, dissolve gelatin in boiling water. slice bananas into gelatin mixture. add frozen strawberries and undrained crushed pineapple.
  • reserve half of the mixture at room temerature. pour remaining mixture into 13x9-inch pan.
  • refrigerate 1 hour or until firm.
  • in mixer bowl, beat cream cheese with sour cream and sugar, spread over chilled layer.
  • gently spoon reserved gelatin mixture on top. refrigerate until firm, about 2 hours.
  • cut into squares, serve on lettuce lined salad plates. garnish with additional pineapple and mint leaves if desired.

What a lovely recipe... The crunchy pecans and sweet coconut remind me of the salads I enjoyed in my childhood. This is a sweet treat for all the senses.

1 can(s) fruit cocktail, in syrup
1 can(s) pears
1 can(s) cling peaches
1 large red delicious apple
1 cup(s) chopped pecans
1 can(s) bakers coconut
1 bottle(s) small marachino cherries
1 large naval orange
1 large banana optional
1 can(s) crushed pineapple

Steps:

  • Drain syrup from canned fruits and set aside. Chop apple into medium dice and coat with lemon juice to stop browning. Optional: Slice banana if using. Supreme the orange and cut slices into thirds. Drain juice from cherries and set aside. Half cherries. Mix all ingredients together. Add about a 1/4 cup cherrie juice.
  • If adding banana, coat with lemon juice to keep from browning. Refridgerate before serving. Serve with Cool Whip or Whipped cream.
