SUNDAY BEST FRUIT SALAD
This is a wonderful and easy fruit salad that is also pretty for special occasions or holidays.

Steps:
- In a small bowl, toss the chopped apples in reserved pineapple juice. Allow to sit for 5 to 10 minutes.
- In a large salad bowl, combine the peach pie filling and pineapple chunks.
- Remove apples from pineapple juice and add to pie filling and pineapple mixture. Add chopped bananas to reserved pineapple juice and let sit for 5 to 10 minutes.
- Peel and slice kiwi and 1/2 of strawberries. Chop the other 1/2 of strawberries and set aside.
- Remove bananas from pineapple juice and add to pie filling mixture. Add chopped strawberries; toss together.
- Arrange kiwi slices around the edge of the serving bowl and alternate with strawberry slices. Chill and serve.

- in large bowl, dissolve gelatin in boiling water. slice bananas into gelatin mixture. add frozen strawberries and undrained crushed pineapple.
- reserve half of the mixture at room temerature. pour remaining mixture into 13x9-inch pan.
- refrigerate 1 hour or until firm.
- in mixer bowl, beat cream cheese with sour cream and sugar, spread over chilled layer.
- gently spoon reserved gelatin mixture on top. refrigerate until firm, about 2 hours.
- cut into squares, serve on lettuce lined salad plates. garnish with additional pineapple and mint leaves if desired.

DADDY'S HOLIDAY BEST FRUIT SALAD
What a lovely recipe... The crunchy pecans and sweet coconut remind me of the salads I enjoyed in my childhood. This is a sweet treat for all the senses.

- Drain syrup from canned fruits and set aside. Chop apple into medium dice and coat with lemon juice to stop browning. Optional: Slice banana if using. Supreme the orange and cut slices into thirds. Drain juice from cherries and set aside. Half cherries. Mix all ingredients together. Add about a 1/4 cup cherrie juice.
- If adding banana, coat with lemon juice to keep from browning. Refridgerate before serving. Serve with Cool Whip or Whipped cream.
