DAD'S MEATLOAF WITH TOMATO RELISH

Dad's Meatloaf with Tomato Relish image

Provided by Tyler Florence

Categories     main-dish

Time 1h50m

Yield 6 to 8 servings

Number Of Ingredients 18

Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
  • Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
  • This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
  • Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
  • Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

FAMOUS DAVE'S CORNBREAD WITH JALAPENO HONEY GLAZE

Famous Dave's Cornbread With Jalapeno Honey Glaze image

This is BY FAR the best cornbread I have ever had. I got it from a special section of the Minnesota Monthly Magazine a few years back. I had a lot of the glaze left over, so you can easily make ½ of the glaze recipe and have enough. I made cornbread in a 9x13 inch pan and it was fully cooked in 25 minutes, which would lead me to believe that cooking time for the muffin tins may need to be reduced (I recommend checking after 15-18 minutes). Enjoy!

DAD'S AWESOME MEATLOAF

Dad's Awesome Meatloaf image

My Dad made this meatloaf at least once a month and it was always my favorite dish. Even my meatloaf hating husband loves it! Sure to be a hit with both the meatloaf lovers and haters alike!

Provided by CoreyAnn

Categories     Meat

Time 2h45m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 1/2 lbs hamburger
2/3 cup dry breadcrumbs
1 cup tomato juice
2 eggs (beat)
1/8 teaspoon pepper
1 teaspoon salt
1/4 cup onion (chopped)
3 tablespoons brown sugar
1/4 cup ketchup
1 teaspoon dry mustard

Steps:

  • Mix hamburger, bread and juice together until well blended.
  • Add eggs, pepper, salt and onion and mix together until well blended.
  • Cook in loaf pan for 1 hour at 350°.
  • Mix together brown sugar, ketchup and dry mustard.
  • Place on top of meatloaf after 1 hour and cook for another 30 minutes.

Tips:

  • Choose the right cornbread mix or recipe. Not all cornbread mixes are created equal. Some are sweeter than others, and some have a finer or coarser texture. Choose a mix or recipe that you like the taste and texture of.
  • Use fresh ingredients. The fresher the ingredients you use, the better your cornbread and meatloaf will taste. Try to use fresh corn kernels, milk, and eggs.
  • Don't overmix the batter. Overmixing the batter can make the cornbread tough. Mix just until the ingredients are combined.
  • Bake the cornbread in a hot oven. This will help it to rise and brown properly.
  • Let the cornbread cool before serving. This will help it to set and make it easier to slice.
  • Use a good quality ground beef for the meatloaf. This will help to ensure that the meatloaf is moist and flavorful.
  • Don't overcook the meatloaf. Overcooking the meatloaf will make it dry and tough. Cook it until it reaches an internal temperature of 160 degrees Fahrenheit.
  • Let the meatloaf rest before slicing. This will help to keep the juices in the meatloaf and make it easier to slice.

Conclusion:

Cornbread and jalapeno meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. The cornbread is moist and flavorful, and the meatloaf is juicy and packed with flavor. This dish is sure to be a hit with your family and friends.
