Steps:
- In a medium saucepan, heat the butter over medium heat until melted. Add the beer and onions and cook, stirring often and reducing the heat to low as the onions start to brown, until the onions are caramelized and all of the liquid has reduced to allow the sugars to brown, 5 to 7 minutes. Season with salt and pepper and set aside.
- In a large saute pan, heat the canola oil over medium heat. Split the links through the center just to open them up so they lay flat. Sear the links on the cut side until brown, about 5 minutes, then remove them from the pan. In the same pan, toast the buns again on the cut side until brown, a few minutes.
- Spread the mustard onto the buns, then add the links. Top with the pickled peppers and caramelized onions. Finish with a small handful of watercress and serve.

Steps:
- Mix flour, basil, parsley, garlic salt, and pepper together in a large bowl, and make a well in the center of the mixture.
- Whisk eggs and 1 cup water together in a medium bowl. Pour into the well in the flour. Stir until well combined; spaetzle dough will be thick and sticky.

Tips:
- Use high-quality kielbasa: The quality of your kielbasa will make a big difference in the final dish. Look for a kielbasa that is made with fresh, high-quality pork and has a good smoky flavor.
- Slice the kielbasa thinly: This will help it to cook evenly and quickly.
- Cook the kielbasa over medium heat: This will help to prevent it from burning or drying out.
- Don't overcrowd the pan: If you overcrowd the pan, the kielbasa will not cook evenly.
- Scramble the eggs gently: Over-mixing the eggs will make them tough.
- Season the eggs to taste: Add salt, pepper, and any other desired seasonings to taste.
- Serve immediately: Kielbasa and eggs are best served hot and fresh.
Conclusion:
This spicy kielbasa scramble is a quick and easy breakfast or brunch dish that is sure to please everyone at the table. The kielbasa adds a delicious smoky flavor to the eggs, and the peppers and onions add a bit of crunch and sweetness. This dish is also very versatile, so you can easily add or remove ingredients to suit your own taste.
