1/2 cup frozen pitted dark sweet cherries, thawed and quartered
3 dark chocolate candy bars (1.45 ounces each), chopped, divided
3 tablespoons canola oil
1/2 cup sugar
2 eggs
1/2 teaspoon almond extract
Dash salt
1/2 cup plus 1 tablespoon all-purpose flour
1/4 cup chopped almonds, toasted

Steps:

  • Pat cherries dry with paper towels; set aside. In a microwave-safe bowl, melt 1/2 cup chopped candy bars with oil; stir until smooth. In a small bowl, combine the sugar, eggs, extract, salt and melted chocolate. Add flour; mix well. Stir in cherries and remaining candy bars. , Spread into a 9x5-in. loaf pan coated with cooking spray. Sprinkle with almonds. Bake at 350° for 25-30 minutes or until brownies begin to pull away from sides of pan. Cool on a wire rack.

1/2 teaspoon baking powder
1/8 teaspoon salt
6 tablespoons unsalted butter, at room temperature
1 cup sugar
2 teaspoons finely ground coffee
2 eggs
2 tablespoons half-and-half
2 teaspoons vanilla extract
1/2 cup bittersweet chocolate chips
1/2 cup fresh or frozen cherries, chopped

Steps:

  • Heat oven to 350°F. Coat an 8" x 8" baking dish with cooking spray. In a bowl, whisk together flours, cocoa, baking powder and salt; set aside. In another bowl, beat butter, sugar and coffee with an electric mixer on high until crumbly, about 30 seconds. Add eggs one at a time; beat on medium until a thick mocha-colored mixture forms. Add half-and-half, vanilla and chocolate chips; beat on low until just combined. Add flour mixture; beat on low until a thick batter forms. Pour into baking dish and top with cherries. Bake until edges are slightly firm but center is soft, 25 to 30 minutes. Cool 30 minutes; cut into 12 pieces.

1/2 c butter, unsalted
1/4 c dark chocolate chips
1 c sugar
2 large eggs
1 tsp vanilla extract
1/3 c dark cocoa
1/2 c flour
1/4 tsp salt
1/4 tsp baking powder
FROSTING
2 c powdered sugar
1/2 c unsalted butter, room tempature
1 jar(s) maraschino cherries (10 oz.)
1 Tbsp milk
2 Tbsp maraschino cherry juice
1 tsp almond extract
1 tsp vanilla extract
1/4 c dark chocolate chips
1 tsp vegetable oil

Steps:

  • 1. Preheat the oven to 350 degrees F. Grease an 8x11 inch pan. Drain the cherries and coarsely chop them. Spread them out on a paper towel to dry slightly.
  • 2. In a small bowl, whisk together the flour, dark cocoa powder, salt, and baking powder. Melt the butter and pour into a large bowl. Whisk in the dark chocolate chips until melted. Whisk in the sugar and then the eggs. Stir in the dry ingredients. Pour into the prepared pan and bake for 20-25 minutes. Cool completely.
