1/2 c butter, unsalted
1/4 c dark chocolate chips
1 c sugar
2 large eggs
1 tsp vanilla extract
1/3 c dark cocoa
1/2 c flour
1/4 tsp salt
1/4 tsp baking powder
FROSTING
2 c powdered sugar
1/2 c unsalted butter, room tempature
1 jar(s) maraschino cherries (10 oz.)
1 Tbsp milk
2 Tbsp maraschino cherry juice
1 tsp almond extract
1 tsp vanilla extract
1/4 c dark chocolate chips
1 tsp vegetable oil

Steps:

  • 1. Preheat the oven to 350 degrees F. Grease an 8x11 inch pan. Drain the cherries and coarsely chop them. Spread them out on a paper towel to dry slightly.
  • 2. In a small bowl, whisk together the flour, dark cocoa powder, salt, and baking powder. Melt the butter and pour into a large bowl. Whisk in the dark chocolate chips until melted. Whisk in the sugar and then the eggs. Stir in the dry ingredients. Pour into the prepared pan and bake for 20-25 minutes. Cool completely.
  • 3. For the buttercream, beat the butter together with the powdered sugar and extracts. Add the milk and maraschino cherry juice until it reaches a desired consistency. Fold in the chopped cherries. Frost the cooled brownies. Chill for 30 minutes and then cut into squares. Melt the remaining 1/4 cup chocolate chips and stir in the oil. Drizzle over the frosted cut brownies.

Tips:

  • Use high-quality dark chocolate for a rich, decadent flavor.
  • Fresh cherries add a burst of sweetness and tartness. If you don't have fresh cherries, you can use frozen or canned cherries.
  • Don't overmix the batter. Overmixing can result in tough, dry brownies.
  • Bake the brownies until a toothpick inserted into the center comes out with just a few moist crumbs attached.
  • Let the brownies cool completely before cutting them. This will help them to hold their shape.

Conclusion:

These dark chocolate cherry brownies are a delicious and decadent treat that are perfect for any occasion. They're easy to make and can be enjoyed by people of all ages. So next time you're looking for a sweet treat, give these brownies a try!
