½ cup white sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
2 cups all-purpose flour
1 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup firmly packed dark brown sugar

4 cups powdered sugar, or as needed
1 teaspoon vanilla extract
¼ teaspoon salt
2 tablespoons heavy cream

Steps:

  • Bring cherries, sugar, and lemon juice to a simmer in a medium pot over medium-low heat. Cook until sugar is dissolved, stirring frequently. Remove 2 tablespoons of cherry juice from the pot and place in a small bowl. Stir in cornstarch until thoroughly combined. Add cornstarch mixture to the pot and simmer until thickened and slightly reduced, about 5 minutes more.
  • Remove compote from heat and cool completely. Measure out 1 cup for the cupcake batter. Reserve remaining compote, about 6 tablespoons, for the frosting.

Yield 24 cupcakes

Number Of Ingredients 7

Nonstick cooking spray
One 15.25-ounce box red velvet cake mix
One 12-ounce can black cherry hard seltzer, such as White Claw Black Cherry Hard Seltzer

  • Beat the vanilla frosting in a large bowl with an electric mixer on medium-high speed until light and fluffy, 4 to 5 minutes. Transfer to a piping bag fitted with a large star pastry tip. CHOCOLATE CHERRY CUPCAKES

Chocolate Cherry Cupcakes image

A Nigella Lawson recipe that always has people asking for more - even people who don't normally eat chocolate cakes. Very morish. Use the best jam you can afford. If you use a relatively cheap jam, it'll probably be sweeter so use less sugar. You could also try adding a splash of kirsch to the batter and icing if you so desire. Very easy to make too.

Tips:

  • Use high-quality dark chocolate. This will give your cupcakes a rich, decadent flavor. You can use bittersweet, semisweet, or even cocoa powder, but the higher the cocoa content, the more intense the flavor will be.
  • Don't overmix the batter. Overmixing can make your cupcakes tough and dense. Mix just until the ingredients are combined.
  • Fill the cupcake liners only 2/3 full. This will prevent them from overflowing in the oven.
  • Bake the cupcakes at 350 degrees Fahrenheit for 20-25 minutes. Cupcakes are done when a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool completely before frosting them. This will help the frosting set properly.
  • Use a piping bag or a ziplock bag with the corner snipped off to frost the cupcakes. This will give you more control over the frosting and help you create a smooth, even finish.
  • Garnish the cupcakes with a cherry or a chocolate chip. This will add a touch of elegance and make them even more irresistible.

Conclusion:

Dark chocolate cherry cupcakes are a delicious and elegant treat that are perfect for any occasion. They are easy to make and can be customized to your liking. With a few simple tips, you can create perfect, moist cupcakes that are sure to impress your friends and family.
