Recipe came from my husband's grandmother. They are much easier to make than they sound. I have halved the recipe successfully; and I have used jam instead of the cooked dates although nothing beats the original recipe.

Tips:

  • Use ripe dates: Softer, riper dates are easier to blend and provide a sweeter flavor to your cookies.
  • Pit the dates before blending: Remove the pits from the dates before blending them with the oats and other ingredients. This will prevent any unpleasant texture in your cookies.
  • Adjust the sweetness: If you prefer less sweet cookies, reduce the amount of maple syrup or honey in the recipe. You can also add a pinch of salt to balance the sweetness.
  • Chill the dough before baking: Chilling the dough for at least 30 minutes before baking helps the cookies hold their shape better and prevents them from spreading too much.
  • Bake the cookies until golden brown: The cookies are done baking when they are golden brown around the edges and slightly soft in the center. Overbaking can make them dry and crumbly.

Conclusion:

Date-filled oatmeal cookies are a delicious and nutritious snack or breakfast option. They are easy to make and can be customized to your liking. With their chewy texture, sweet date filling, and wholesome ingredients, these cookies are sure to satisfy your cravings.
