1 cup seasoned rice vinegar (such as Nakano®)
¼ cup white sugar
2 tablespoons kosher salt
1 teaspoon ground turmeric
1 (2 pound) cauliflower, cut into florets
1 ½ teaspoons kosher salt
9 small Thai chile peppers, tops trimmed
6 cloves garlic, peeled

  • Rinse cauliflower and evenly distribute cauliflower florets, chile peppers, garlic cloves, and black peppercorns among 3 pint-sized jars, pressing down so it's tightly packed. Pour brine into the jars, covering the cauliflower.

Tips:

  • Choose fresh daylily buds: Select buds that are young and tender, with a vibrant green color. Avoid buds that are wilted or have brown spots.
  • Prepare the buds properly: Before pickling, remove the pistils and stamens from the buds. This will help to prevent the pickles from becoming bitter.
  • Use a flavorful pickling liquid: The pickling liquid is what gives the pickles their flavor, so be sure to use a combination of spices and seasonings that you enjoy. Common ingredients in daylily bud pickles include vinegar, sugar, salt, and spices like mustard seeds, peppercorns, and cloves.
  • Let the pickles cure: After preparing the pickles, let them cure for at least two weeks before eating. This will allow the flavors to develop and mellow.

Conclusion:

Daylily bud pickles are a delicious and unique way to enjoy this edible flower. With their slightly crunchy texture and tangy flavor, they are a great addition to salads, sandwiches, and other dishes.
