DEEP-FRIED APPLE AND BRIE BITES

Deep-Fried Apple and Brie Bites image

This is a recipe I created after receiving a deep fryer for Christmas. These come out tasting just like little mini apple pies or apple empanadas. Beware: this recipe can get messy, so you will want to make sure you have extra paper towels waiting in the wings.

3 Fuji apples - peeled, cored, and diced small
½ pound Brie cheese, cut into very small pieces
20 vanilla wafers, crushed
1 tablespoon honey
1 teaspoon vanilla extract
1 egg
1 ¼ cups all-purpose flour, or more as needed
¾ cup milk
½ cup confectioners' sugar
½ teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
oil for frying
20 vanilla wafers, crushed, or more as needed

Steps:

  • Stir apples, Brie cheese, 20 crushed vanilla wafers, honey, and vanilla extract together in a bowl. Cover the bowl with plastic wrap and refrigerate until cold, at least 15 minutes.
  • Beat egg until frothy in a large bowl with an electric mixer. Gradually add flour, milk, confectioners' sugar, baking powder, cinnamon, and salt; beat until batter is thick and smooth, adding more flour as necessary to reach desired consistency.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Pour 20 crushed vanilla wafers into a shallow bowl.
  • Roll apple mixture into small balls. Drop balls into funnel cake batter and turn to coat completely. Roll coated balls in crushed vanilla wafers. Place the coated apple balls onto a plate while coating the rest; do not stack.
  • Working in batches, fry apple-brie bites in hot oil until golden brown, 3 to 5 minutes. Transfer cooked apple-brie bites to a paper-towel lined plate to drain and cool.

Apples-and-Honey Baked Brie image

In this delicious baked Brie recipe, Brie is topped with sautéed apples and honey and wrapped in phyllo, then baked until gooey. The perfect holiday appetizer.

Provided by Jake Cohen

Number Of Ingredients 6

8 Tbsp. (1 stick) unsalted butter
2 small Honeycrisp apples, cored and thinly sliced
¼ cup honey
Kosher salt and freshly ground black pepper
6 sheets frozen phyllo dough, thawed and trimmed into 12-inch squares
1 (16-ounce) wheel Brie cheese

Steps:

  • Preheat the oven to 400°F. Line a half sheet pan with parchment paper.
  • In a medium skillet, heat 2 tablespoons of the butter over medium heat. Add the apples and cook, stirring often, until softened and lightly caramelized, 10 to 12 minutes. Transfer the apples to a bowl and toss with the honey. Season with salt and pepper. In a small saucepan, melt the remaining 6 tablespoons butter. On the prepared sheet pan, lay out 1 sheet of the phyllo dough and lightly brush it with melted butter to coat. Lay another sheet of phyllo on top, brush with butter, and repeat this process until you've layered all 6 sheets of phyllo. Place the Brie in the center and top it with the apple mixture. Fold the corners of the phyllo sheets toward the center of the Brie, overlapping them to seal, then brush with any remaining melted butter.
  • In a small saucepan, melt the remaining 6 tablespoons butter. On the prepared sheet pan, lay out 1 sheet of the phyllo dough and lightly brush it with melted butter to coat. Lay another sheet of phyllo on top, brush with butter, and repeat this process until you've layered all 6 sheets of phyllo.
  • Place the Brie in the center and top it with the apple mixture. Fold the corners of the phyllo sheets toward the center of the Brie, overlapping them to seal, then brush with any remaining melted butter.
  • Bake, rotating the pan halfway through, for 20 to 25 minutes, until golden brown and crisp. Transfer to a platter and serve immediately.

Tips:

  • Use a variety of apples. Different apples will give your bites different flavors and textures. Some good options include Granny Smith, Honeycrisp, and Pink Lady.
  • Choose a ripe brie. A ripe brie will be soft and creamy, and it will melt beautifully in the bites.
  • Use a light coating of batter. A thick coating of batter will make the bites too heavy and greasy.
  • Fry the bites in hot oil. This will help them cook quickly and evenly.
  • Drain the bites on paper towels before serving. This will remove any excess oil.
  • Serve the bites with your favorite dipping sauce. Some good options include honey mustard, apple cider vinegar, or caramel sauce.

Conclusion:

Deep-fried apple and brie bites are a delicious and easy-to-make appetizer or snack. They're perfect for parties or potlucks, and they're sure to be a hit with your guests. So next time you're looking for something special to serve, give these bites a try!
