1 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3 tablespoons canola oil
1 1/3 cups milk
1 egg
Freshly ground black pepper
1 quart canola oil (approximately, as needed for deep frying)
2 cups panko (Japanese) bread crumbs
1 tablespoon Irvine Spices Cajun Seasoning
1/2 cup mayonnaise
1/4 cup chopped fresh parsley leaves
1/8 cup fresh lemon juice
1 pound lump crabmeat, picked for shells and with excess liquid carefully squeezed out without breaking up lumps
1 cup mayonnaise
1 tablespoon Irvine Spices Specialty Chipotle Chile Powder

Steps:

  • To make the fritter batter, combine flour, baking powder and salt in a large bowl. In another smaller bowl, whisk together oil, milk, egg and black pepper. Add the egg mixture to the flour mixture and combine until all dry ingredients are moistened.
  • Heat oil to 375 degrees F in a deep-fryer.
  • Mix panko bread crumbs, Cajun Seasoning, mayonnaise, parsley and lemon juice. Fold in crab meat, trying to avoid breaking up lumps. Form crab mixture into "cocktail size" balls. Place the crab ball on a slotted spoon, and holding over the bowl of fritter batter, ladle enough of the batter over it to coat. Deep-fry in hot oil until golden brown and drain.
  • Whisk together mayonnaise and Chipotle Chile Powder. Season, with salt, if needed. Serve crab fritters with spicy mayo as a dipping sauce.

1 pound Basic Deep-Fried Shrimp
1 cup bamboo shoots
1 cup chinese cabbage stems
1 cup celery
1/2 cup water chestnut
1/2 cup onion
1/2 cup fresh mushrooms
1/2 cup snow pea
2 stalks scallion
1 clove garlic
1 tablespoon cornstarch
1 tablespoon soy sauce
1 teaspoon sugar
dash pepper
3 tablespoons oils
few drops sesame oil
1 teaspoon salt
1/2 cup Stock, Chicken or favorite stock

Steps:

  • 1. Shell, devein and butterfly shrimp. Marinate as in the second or third variation (from the Edit Tap, click to open recipe and follow instructions), then deep-fry. (Reserve the marinade.) 2. Slice bamboo shoots thin also Chinese cabbage stems, celery, water chestnuts, onion and mushrooms. 3. Cut snow peas in 2 or 3 pieces. Split scallions in half lengthwise then cut crosswise in 1-inch sections. Crush garlic. 4. Blend cornstarch, soy sauce, sugar and pepper to a paste. 5. Heat remaining oil along with sesame oil. Add salt and garlic stir-fry to brown lightly. Add all vegetables except scallions and stir-fry 2 to 3 minutes to heat through. 6. Add reserved shrimp marinade and stir-fry 2 minutes more. 7. Add scallions stir-fry a few times. Then add stock and heat quickly. Cook, covered, over medium heat, until vegetables are nearly done (about 3 minutes). 8. Stir in deep-fried shrimp to reheat. 1 tablespoon prepared horseradish
2 cloves garlic, peeled

1 cup hush puppy mix
½ cup milk
1 egg
1 pound cooked lump crabmeat

Steps:

  • In the container of a food processor, combine the mayonnaise, mustard, horseradish, garlic, and lemon juice. Process until well blended. Transfer to a bowl, stir in chives, cover and refrigerate until ready to serve.

1/2 cup flour
1 pound , lump crab meat

oil for deep-frying
2 tablespoons oils
1/2 teaspoon salt
1/2 cup Stock, Chicken or favorite stock
1 tablespoon cornstarch
1 teaspoon sugar
1/4 cup water
1 teaspoon soy sauce

  • 1. Soak dried mushrooms. 2. Shred bamboo shoots, celery, water chestnuts, snow peas and soaked mushrooms. Crush garlic. 3. Mince ginger root then combine with soy sauce, sherry and sesame oil. 4. Beat eggs. Blend in flour and beat vigorously to a smooth batter. Pick over and mince crabmeat then add to batter along with garlic salt and pepper. Blend in well. 5. Heat oil. Drop in crabmeat mixture, 1 tablespoon at a time, and deep-fry until golden. Drain on paper toweling. Keep warm. 6. Heat remaining oil. Add salt, then crushed garlic stir-fry to brown lightly. Add shredded vegetables and stir-fry 2 to 3 minutes.7. Add ginger-soy mixture stir-fry 1 minute more. Then add stock and heat quickly. Cook, covered, 2 to 3 minutes over medium heat. 8. We had deep fried calamari and vegetables at a restaurant and my Wife LOVED it, so when we got home, I experimented for a few hours, and this is what I came up with. It can be used as a base batter recipe for deep fried calamari and vegetables, shrimp alone or with veggies, chicken, broccoli, you name it. It's versatile and delicious! I'm writing it as though it's for just veggies. The ingredients listed is enough for 1-1 1/2 pounds of meat, veggies, or a combination of both. Substitute principle ingredient as you wish.

1 1/2 lbs vegetables
1 cup unsifted white flour
1/2 teaspoon salt
1/8 teaspoon white pepper
1/2 teaspoon garlic powder
1/8 teaspoon paprika (Hungarian is best)
1/2 teaspoon ground rosemary
1 teaspoon sugar
1 beaten egg
1 cup milk (room temperature)
2 cups oil, to deep fry (there will be oil left when you are done)

Steps:

1/2 lb fresh crabmeat
1 cup biscuit mix (Pioneer, Bisquick)
3/4 teaspoon salt
1/8 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 tablespoon chopped fresh parsley
1/2 teaspoon grated fresh lemon rind
1/4 cup milk
1 large egg
2 tablespoons fresh lemon juice
1/4 teaspoon Worcestershire sauce
vegetable oil
1/2 cup creole mustard
1/4 cup mayonnaise
1 teaspoon lemon juice
1/2 teaspoon hot sauce
1/4 teaspoon pepper

Steps:

  • To make creole sauce: whisk together all the sauce ingredients; set aside or chill until ready to use.
  • To make the fritters: drain and flake the crabmeat; remove any bits of shell; set aside.
  • In a mixing bowl, add the biscuit mix and next 5 ingredients; stir to combine; make a well in the center of of the dry ingredients.
