Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 12

2 tablespoons vegetable oil (olive or grapeseed oil works too)
2 onions (or leeks)
3 -4 stalks celery, sliced
4 potatoes, cubed (with or without skins peeled)
2 garlic cloves (or 1/2 tsp garlic powder)
1 teaspoon onion powder
4 -5 cups water
1 teaspoon thyme
1 1/2 teaspoons basil
1 teaspoon salt
2 tablespoons fresh parsley (or 1 Tbsp dried)
1 teaspoon dill (optional)

Steps:

  • Sauté chopped onions and celery in oil over high heat for 3-5 minutes in a large pot.
  • Add rest of vegetables, water, thyme, and basil. Cook over medium heat until tender (this takes about 30 minutes).
  • Purée in blender or food processor until smooth and pour back into pot.
  • Add the rest of the seasonings and salt, and simmer over low heat for an additional 10 minutes.
  • Variation: Break 1 bunch kale into small pieces, steam, and add to soup in the last 10 minutes.
  • Variation: Purée just one half of soup for a more chunkier version.

Tips:

  • Choose the Right Potatoes: Yukon Gold or russet potatoes are great choices for a creamy and flavorful soup.
  • Cut Potatoes Evenly: Uniformly sized potato pieces ensure even cooking.
  • Don't Overcook the Potatoes: Overcooked potatoes can become mushy and lose their shape.
  • Use Vegetable Broth: Vegetable broth adds flavor and depth to the soup. Be sure to choose a low-sodium broth or adjust the salt level accordingly.
  • Sauté the Vegetables: Sautéing the vegetables before adding them to the soup enhances their flavor and adds a nice caramelized touch.
  • Use Fresh Herbs: Fresh herbs like thyme and rosemary add a burst of flavor to the soup. If using dried herbs, use about 1/3 of the amount of fresh herbs.
  • Add Some Spice: A pinch of cayenne pepper or paprika adds a subtle warmth to the soup.
  • Don't Overcrowd the Pot: Make sure there is enough space in the pot for the potatoes and vegetables to cook evenly. If necessary, cook the soup in batches.
  • Simmer Gently: Bring the soup to a boil, then reduce heat and simmer gently for at least 15 minutes, or until the potatoes are tender.
  • Season to Taste: Taste the soup and adjust the seasonings as needed. Add more salt, pepper, or herbs until it reaches your desired flavor.
  • Serve with Toppings: Serve the soup with a dollop of vegan yogurt or sour cream, a sprinkle of fresh herbs, and a side of crusty bread or crackers.
