4 sprigs parsley
4 garlic cloves
2 bay leaves
2 lemons, cut in half
1/4 cup white wine (or use white grape juice)
2 tablespoons olive oil
1 quart water
salt and pepper
2 whole artichokes

Steps:

  • Put the parsley, garlic, bay leaves, lemons, wine, oil and water in a large pot and bring to a simmer. Season the liquid with salt and pepper.
  • In the meantime prepare the artichokes:
  • Wash artichokes under cold water. Using a heavy stainless steel knife, cut off the stems close to the base. Pull off the lower petals that are small and tough. Cut off the top inch of the artichoke and rub with half a lemon to preserve the green color. Or you may put the artichokes in water that has some lemon juice in it. If you wish, trim the thorny tips of the petals with kitchen shears.
  • Place the artichokes in the steaming broth, bottom up. Cover and simmer for about 30 minutes. The artichokes are done when a knife is inserted into the base and there is no resistance.
  • To eat, pull off a leaf and scrape the meat off the tender end with your front teeth. Dip the ends of the leaves in lemon juice and melted butter if desired. When you reach the center cone of purple prickly leaves, remove it. This is the choke that protects the heart. Now, scrape away the thistle fuzz covering the artichoke heart. The heart is the meatiest and in my opinion, the best part of the artichoke. Steamed artichokes may be served hot or cold. Enjoy!
  • You may dip the artichoke in mayonnaise that has lemon added to it, or butter and lemon juice. Yum!

4 large artichokes
salt and pepper
2 quarts cooking oil

Steps:

  • Wash and dry artichokes.
  • Remove tough outer leaves and bottom stalks from artichokes.
  • Pull leaves apart until center is slightly exposed.
  • Liberally sprinkle salt and pepper inside of the artichokes, between the leaves.
  • Heat oil in deep fryer until it reaches 350°F.
  • Add the artichokes to oil and cook for 10 mins, until crisp and golden.
  • Turn artichokes often, pressing them against the pan to open.
  • Drain on paper towels.
  • Sprinkle liberally with additional salt and pepper, and dig in!

4 medium artichokes
½ cup butter, melted
3 tablespoons basil pesto
¼ cup Italian seasoned bread crumbs

Steps:

  • Trim the stems from the artichokes, and remove the small leaves from the bottoms. Slice 1 inch or so off the top so that it is flat. Pour 2 cups or 1 inch of water into a large pot, and insert a steamer basket. Place artichokes into the steamer, cover, and bring to a boil. Allow them to steam for about 15 minutes, or until a fork can easily pierce the stem.
  • In a cup or small bowl, mix together the melted butter and pesto. Drizzle the mixture over upright artichokes, being sure to dribble into all of the crevices. Then sprinkle bread crumbs across the tops and serve.

4 artichokes
5 cloves garlic - chopped fine
½ cup grated parmesan cheese or romano cheese
½ cup italian parsley - chopped fine
½ tsp. red pepper flakes
2 cups italian style bread crumbs
3 - 4 tablespoons olive oil

Steps:

  • 1. Bring the artichokes to a slow boil with the lemon wedge added. Simmer on low until the leaves are tender; 15 -20 minutes. Drain and let the artichokes cool. When the artichokes are cooled pound them on the counter to open them up; then snip the tips of the leaves and the stems off. Combine the cheese, garlic, bread crumbs, red pepper flakes and parsley in a bowl. Stuff the leaves of the artichokes and place in a baking dish; drizzle the tops with olive oil. Preheat Oven 350 degrees: Bake the artichokes 30-35 minutes. Let cool a bit and serve.
