1 (16 ounce) package ziti pasta
1 tablespoon olive oil
½ (8 ounce) package fresh spinach, chopped
1 (4 ounce) package fresh mushrooms, sliced
1 (15 ounce) container part-skim ricotta cheese
1 (8 ounce) package crumbled goat cheese
½ (8 ounce) package shredded mozzarella cheese
1 (14 ounce) jar spaghetti sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.

1 box ziti pasta
1 (16 ounce) container ricotta cheese
3 cups shredded mozzarella cheese
1 egg
1/4 cup chopped fresh parsley
1 can mushroom
1 1/2 jars pasta sauce
4 hot Italian sausages or 4 mild Italian sausages, cooked and sliced

Steps:

  • Simmer the pasta sauce and sausage in a small saucepan on the lowest heat possible for simmering.
  • In the meantime, cook the pasta according to package directions.
  • While pasta is cooking, whip together ricotta, mushroom, egg, and parsley in a medium bowl.
  • When pasta is done, drain.
  • In a 9 by 9-ish deep casserole, spread about 1/2 cup of the pasta sauce/sausage mixture.
  • Layer on half of the ziti.
  • Put about 5 or 6 evenly spaced spoonfulls of ricotta on top of the ziti.
  • put on half remaining sauce.
  • Sprinkle 1 cup of the mozzarella on the sauce.
  • Layer on remaining ziti.
  • Put remaining ricotta on as directed above.
  • Put on the rest of the sauce, and top off with the remaining mozzarella cheese.

1 lb ziti (can sub penne) pasta
olive oil
1 lb bulk italian sausage or ground beef or pork
3-4 clove garlic, chopped
1 Tbsp fresh rosemary (or basil), minced
1 Tbsp italian seasoning
1 tsp red pepper flakes
1 large jar of marinara sauce (about 32 ounces) or make your own tomato sauce
1/2 lb of mozzarella cheese, grated
1 c heaping of ricotta cheese
1 c grated parmesan or pecorino cheese

Steps:

  • 1. Bring a large pot of water to a strong boil. Add about a tablespoon of salt for every 2 quarts of water. Add the pasta and boil, uncovered, until the pasta is al dente-edible but still a little firm.
  • 2. Drain the pasta through a colander. Toss with a little olive oil so the pasta does not stick together while you make the sauce. Pour a tablespoon or so of olive oil into a large sauté pan on medium-high to heat.
  • 3. When the oil is hot, add the bulk sausage or ground meat. Do not crowd the pan (work in batches if needed). Break up any large chunks of sausage as it cooks. Brown well. Don't stir that often or it will be more difficult for the meat to brown. If you are using ground beef or pork instead of sausage, add a little salt.
  • 4. When the meat is mostly browned, add the onions and stir well to combine. Sauté everything until the onions are translucent and beginning to brown, about 4-5 minutes. Add the garlic, rosemary or basil, Italian seasoning and red pepper flakes and stir to combine.
  • 5. Cook 1 minute, then add the tomato sauce and stir well. Bring to a simmer. Preheat the oven to 350°F. Spread a thin layer of sauce in the bottom of a 9x13-inch casserole pan, then dot the surface with half the ricotta cheese.
  • 6. Ladle in some sauce with the pasta, mix it well and add the pasta into the casserole. Pour the rest of the sauce over the pasta, dot the remaining ricotta cheese over the pasta, and sprinkle on top both the mozzarella and the Parmesan cheese.
  • 7. Bake in the oven until the top is nicely browned, about 20 minutes.
