- My Note: I found this recipe in a "Bonus Book" that came with my TOH magazine in June, 2006. I am not a potato salad fan, but I have changed my tune, though. This recipe is AWESOME. Other potato salad is very similar to this, but it doesn't have any dill pickle juice, salt, or celery seed. It does have garlic and onion powder though. It is a very delicious recipe! I think I can play with this one some.!

SOUTHERN DILL POTATO SALAD
My mother made this potato salad for me as a boy growing up in Spanish Fort, Alabama (on the Gulf of Mexico). I have re-created it with a slight modern tangy twist. I know you will like it! Best taste is achieved when the salad is covered and placed in refrigerator overnight.

Tips:
- Use waxy potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, making them ideal for potato salad.
- Boil potatoes until tender: Be sure to boil the potatoes until they are tender but not mushy. You should be able to easily pierce them with a fork.
- Let potatoes cool completely: Allow the potatoes to cool completely before adding them to the salad. This will help prevent the salad from becoming watery.
- Use a light touch when mixing: Gently fold the ingredients together until they are combined. Over-mixing will result in a mushy salad.
- Chill the salad before serving: Refrigerate the salad for at least an hour before serving. This will allow the flavors to meld and the salad to become more firm.
- Garnish with fresh herbs: Fresh dill, parsley, or chives add a pop of color and flavor to potato salad.
Conclusion:
This potato salad is a delicious and easy-to-make side dish that is perfect for any occasion. With its creamy, tangy dressing and crunchy vegetables, this salad is sure to be a hit with everyone at your table. So next time you're looking for a simple and satisfying side dish, give this potato salad a try. You won't be disappointed!
