DELICIOUS RUSSIAN TEA
When I was a kid, my Mom would always make this for me when I was sick. It is warm and soothing, and gives you a full day's worth of vitamin C due to the citric acid in the Tang (just like the astronauts drink!) and lemonade mix. Moms are a sneaky and underhanded bunch, but we love them anyway.

GRANDMA'S RUSSIAN TEA
I grew up drinking this tea at my grandmother's house. I now fix it at my house on really cold days, when I am sick (lots of vitamin C!), and at Christmas. It is perfect to let simmer on the stove to make the house smell good and to serve to guests. I have no idea why its called 'Russian' tea; that is just what my grandmother always called it. Use any tea you like. I've used regular black tea, decaf, and cinnamon spice, and it's all great. If using spiced tea, you may want to adjust the amount of cinnamon, cloves, and allspice. This is also great reheated!

RUSSIAN TEA
I love this tangy beverage on a cold winter's morning when I want something tasty and hot, but don't want coffee! It makes a great gift from your kitchen, too! If calories are your concern, use an artificially sweetened orange drink mix, eliminate the sugar and sweeten to taste with sugar substitute.

Steps:
- First, brown the butter: Place the butter in a medium saucepan over low heat to cook. Check it after about 7 minutes; it should be a medium-brown color, not too light but not too burnt. Once it reaches that color, take it off the heat and let it cool. Refrigerate to continue to cool for about 30 minutes.
- Preheat the oven to 350 degrees F. Line 3 half sheet pans with parchment paper.
- Add the cold browned butter, flour, powdered sugar, salt, vanilla extract and cinnamon to a food processor; process until light and fluffy. Transfer to a large bowl. Add the walnuts and mix with a rubber spatula until combined.
- Using a small ice cream scoop, portion 48 mounds of the dough onto your prepared sheet pans, spacing them 2 inches apart. Place in the freezer to cool for 15 minutes.
- Bake until the cookies are firm and smell nutty and toasty, 15 to 18 minutes. Rotate the pans 180 degrees halfway through baking.
- Meanwhile, place additional powdered sugar in another large bowl. Once the cookies are out of the oven, let cool for exactly 6 minutes 30 seconds then toss in the powdered sugar. Enjoy!

MAMA'S OLD-FASHIONED RUSSIAN TEA
Our instant Russian Tea mixes with Tang and instant tea powder are good, but nothing can compare to coming in to the wonderful aroma of this old-fashioned beverage as it simmers on the stove! It brings back special memories of Christmas time when I was a child and this was our "special holiday treat" during World War II.

Tips for Brewing and Serving Russian Tea:
- Use high-quality tea leaves: Choose loose-leaf tea or tea bags made from premium tea leaves. Fresh tea leaves will produce a more flavorful and aromatic cup of tea.
- Water temperature matters: The ideal water temperature for brewing black tea is between 195°F (90°C) and 205°F (96°C). For green tea, the ideal water temperature is between 175°F (80°C) and 185°F (85°C).
- Steep for the right amount of time: The steeping time for black tea is typically 3-5 minutes, while green tea should be steeped for 1-3 minutes. Over-steeping can result in a bitter taste.
- Add sugar or honey to taste: Russian tea is traditionally served with sugar or honey. Add it to your liking, or enjoy it plain.
- Garnish with lemon or orange slices: A slice of lemon or orange adds a refreshing citrus flavor to your tea. It also enhances the aroma and makes the tea look more inviting.
