3 skinless, boneless chicken breast halves, halved
2 (15 ounce) cans green beans, drained
6 red potatoes, cut into chunks
1 (.6 ounce) packet zesty Italian salad dressing mix
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts in a single layer in the center of a 9x13-inch baking dish. Pour green beans into one side of the baking dish. Spread potatoes out on the other side of the dish.
  • Sprinkle dressing mix over chicken, beans, and potatoes; drizzle butter over the top. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until chicken breasts are no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This is a great 'treat' recipe I developed for a Valentine's Day Dinner. It's very rich and delicious, so should be reserved for special occasions!

6 large russet potatoes
1/4 cup shredded sharp cheddar cheese
1/4 cup sour cream
2 tablespoons butter
2 tablespoons chopped green onions
4 slices good quality bacon (I get thick sliced from butcher)
hy seasoning salt (liberal sprinkling)
pepper

Steps:

  • Preheat oven to 350 degrees.
  • Bake potatoes wrapped in foil until tender (about one hour).
  • Meanwhile fry bacon until crispy, crumble.
  • Reserve grease.
  • In large bowl add bacon grease (optional).
  • Add Cheddar, Sour Cream, Butter, Green Onion and Crispy bacon pieces to bowl.
  • Remove potatoes and when cool enough to handle cut in half and scoop out flesh into bowl.
  • (Flesh should still be warm so ingredients will melt).
  • Save skins for stuffing!
  • Mash potato and ingredients.
  • Stuff skins (will make about 4 jumbo halves).
  • Bake at 400 degrees until browned (about 10 minutes).

2 1/2 pound(s) skin-on red potatoes (cubed)
1 - green bell pepper (diced)
1 pound(s) white button mushrooms (sliced)
1 medium red onion or sweet vidalia (diced)
2 medium or one large boneless skinless chicken breast (diced)
1 ounce(s) land o lakes ranch seasoning
2 1/2 ounce(s) of real bacon pieces (your favorite brand)
1/2 pound(s) colby/jack or monterey jack cheese (shredded)
pinch(es) salt and pepper to taste
- non-stick spray

Steps:

  • Spray glass baking dish with non-stick spray, and cut red potatoes into bite size pieces.
  • Dice and slice other vegetables and add to pan. Now the chicken can be cooked before or along with. I understand the concern about that, so do what you will. I personally just dice it up and add it along with the other ingredients and it cooks up perfect.
  • Add a third of the bacon pieces and the 1oz. of ranch seasoning. Get your hands in there and mix it completely.
  • Bake for one hour uncovered at 350 to 400 depending on your oven. Pull out and check potatoes and give a quick toss. Put back in for another 15 minutes or until done.
  • When you are satisfied everything is done, pull out and add 1/2 lb. of shredded cheese and the last of the bacon bits. Place once more into the oven to melt the cheese or bake it till it's crisp, your choice.I like ours to be gooey!
  • Plate up as a main dish or use as a side as I do at family dinners. Change this recipe with other ingredients to make it your very own. The possibilities are endless.
