What can I do with lots of peas? These 15 delicious pea recipes are absolutely perfect to turn fresh or frozen peas into vibrant, healthy and convenient meals for the entire family like this quick pasta with peas.

Categories     pasta

Time 15m

Number Of Ingredients 7

1 Tbsp olive oil, plus more for drizzling
1 small onion, diced
1 lb (450 grams) peas, fresh or frozen
2 cups vegetable broth or hot water
½ lb (220 grams) short shaped pasta
salt & pepper to taste
½ cup freshly grated parmesan, plus more to serve

Steps:

  • Warm the olive oil in a large pot over medium heat. Add the diced onion and cook until the onion has softened and is turning translucent, about 5 minutes.
  • Add the peas and cook stirring frequently about 1 minute.
  • Then add vegetable broth (or water), raise the heat, bring to a boil and stir in pasta and salt (I use 1 tsp of salt and then I adjust the seasoning at the end). You might need to add or to reduce the amount of water according to the type of pasta.
  • Cover with a lid, reduce the heat and cook your pasta in the starchy water. During the cooking time, you need to stir often until the water is absorbed, otherwise, it will stick to the bottom. The water should barely cover the pasta, but it's fine, add extra water gradually only if needed.
  • Cook until ready but firm to the bite. Turn off the heat and stir in freshly grated parmesan cheese until melted. Taste and adjust the seasoning.
  • Serve immediately with a drizzle of olive oil, black pepper, and extra parmesan cheese if you like. Enjoy!

Yield 16

Number Of Ingredients 6

8 large eggs
Kosher salt and freshly ground pepper
1/2 cup frozen peas
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
Cooked pancetta bits and fresh pea shoots, for serving

Steps:

  • With a slotted spoon, gently drop eggs into a medium saucepan of boiling water; reduce heat to medium-high and cook 10 minutes. Using the spoon, transfer eggs to an ice bath until cool. Return the saucepan to a boil, season the water with 1 tablespoon salt, and blanch peas until bright green and tender, about 2 minutes. Drain and rinse under cold water until cool.
  • Peel and halve eggs lengthwise; remove yolks and transfer to the bowl of a food processor with peas, mayonnaise, mustard, 1 tablespoon water and a pinch of salt; puree until smooth. Spoon mixture into whites. Garnish with pancetta, pea shoots, and black pepper.

Tips:

  • Choose Fresh Peas: Use fresh, high-quality peas for the best flavor and texture. Fresh peas should be plump and bright green.
  • Cook Peas Properly: Cook peas until they are tender but still retain a slight bite. Overcooked peas will become mushy and lose their flavor.
  • Use a Variety of Ingredients: Don't be afraid to experiment with different ingredients in your deviled peas. Try adding chopped hard-boiled eggs, crumbled bacon, chopped celery, or grated carrots.
  • Season to Taste: Season your deviled peas to taste with salt, pepper, and other spices. You can also add a splash of vinegar or lemon juice for a bit of tang.
  • Serve Immediately: Deviled peas are best served immediately after they are made. However, they can also be stored in the refrigerator for up to 3 days.

Conclusion:

Deviled peas are a delicious and versatile side dish that can be enjoyed by people of all ages. They are easy to make and can be tailored to your own personal taste. Whether you like them classic or with a twist, deviled peas are sure to be a hit at your next gathering.
