2 avocados
2 tablespoons lime juice
salt, to taste
pepper, to taste
1 tomato, diced
½ cup red onion, diced
2 tablespoons fresh cilantro
1 tablespoon garlic, minced
1 tablespoon jalapeño, minced
tortilla chip
fresh cilantro

Steps:

  • Place the eggs in a large pot and cover with 1 inch (2cm) of cold water. Cover with a lid.
  • Bring to a rolling boil, and remove from heat. Let the eggs sit, covered for 8-10 minutes.
  • Remove from water and immediately place in bath of ice water for a few minutes.
  • Remove shells and cut the egg in half, vertically.

1 avocado, halved and pitted
1 tablespoon minced onion
1 clove garlic, minced, or more to taste
½ lime, juiced
½ cup mayonnaise
salt to taste
1 teaspoon chili powder for garnish, or to taste
½ cup finely shredded Cheddar cheese
12 olives, each cut into 4 slices

Steps:

  • Cut peeled eggs in half horizontally and scoop egg yolks into a bowl. Scoop avocado from peels and mash the flesh into egg yolks. Stir onion and garlic into yolk mixture; add lime juice, mayonnaise, and salt. Stir until creamy.
