DIANE'S CHICKEN DISH

Diane's Chicken Dish image

This has been a family favorite of ours for many years and is a sure way to make sure my teenage girls make it to the dinner table. Worth any prep time! Serve over rice. If your family are hearty eaters like mine, this will only serve 4.

PAUL PRUDHOMME'S CHICKEN DIANE

Paul Prudhomme's Chicken Diane image

This was one of my FAVORITE chicken dishes growing up. We didn't have it too often, (for health reasons :) but when we did I knew it was going to be a good night! If you can't find Paul Prudhomme's "Magic Cajun Spice" you can substitute his "Magic Poultry" or even "Magic for Veal or Pork", but the Cajun seasoning gives it a good kick! Also, we much more prefer boneless skinless thighs. In our family's opinion this dish is just not as flavorful with breast meat, but I left the recipe as it was written by Paul Prudhomme.

  • Once cooked, take the chicken breasts out of the pan, transfer them to a separate plate and cover with foil to keep warm.

  • Season to taste and add the chicken breasts to heat through for 1-2 mins. Serve!

Tips:

  • Mise en Place: Before starting, gather and measure all ingredients and equipment. This will help streamline the cooking process and ensure you have everything you need.
  • Seasoning: Don't be afraid to adjust the seasoning to your taste. If you want a bolder flavor, add more garlic, herbs, or spices.
  • Cooking Temperature: Maintain a medium-low heat throughout the cooking process. This will prevent the chicken from overcooking and drying out.
  • Cooking Time: Cooking times may vary depending on the thickness of your chicken breasts. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C) before removing from heat.
  • Resting: Allow the cooked chicken to rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful dish.
