A true Southern delicacy! I didn't know I even liked Pimento Cheese! This stuff is addictive... so addictive I am having a lock installed on my refrigerator (not to keep me out - but in case the neighbors find out!). I have picked at Pimento Cheese spreads at parties and potlucks but never have the desire to make my own... and then I was asked if I would make a batch for a friend...This is a cross between her mom's recipe and my creativity. Great on Celery Sticks, Crackers, Bread... even straight out of the bowl! Even picky four year olds liked it!

PIMENTO CHEESE TO DIE FOR

Pimento Cheese to Die For image

I am 19 weeks pregnant and all I want to eat are sour foods (pickles, tomatoes with balsamic vinegar, grapefruit, Zaxby's sauce, etc.) Well, last night I made a sandwich on toasted whole grain bread with this pimento cheese, sliced tomato, and dill pickles, and it was the BEST THING I've ever put into my mouth! Like my friend Brandi said, "Like manna from heaven"! This recipe is great for those of you who don't like too much mayonnaise in your pimento cheese. Makes 26 4-oz servings. Each serving: 185 cals.

Tips:

  • Select the Freshest Ingredients: Use fresh, high-quality ingredients for the best flavor. Fresh bell peppers, sharp cheddar cheese, and creamy mayonnaise are essential.
  • Roast the Bell Peppers: Roasting the bell peppers enhances their sweetness and smoky flavor. Roast them until the skin blisters and chars, then peel and chop them.
  • Shred the Cheese Fresh: Shredding the cheese yourself ensures a smoother texture and better flavor than pre-shredded cheese.
  • Use High-Quality Mayonnaise: Choose a full-fat mayonnaise for a rich and creamy texture. Avoid low-fat or fat-free mayonnaise, as they can make the pimento cheese dry and gritty.
  • Season to Taste: Adjust the seasonings to your preference. Add more cayenne pepper for a spicy kick, or smoked paprika for a smoky flavor.
  • Chill Before Serving: Allow the pimento cheese to chill for at least 30 minutes before serving. This helps the flavors to meld and develop.

Conclusion:

Pimento cheese is a classic Southern comfort food that is perfect for any occasion. With its creamy texture, smoky flavor, and sharp cheddar cheese, it's a crowd-pleaser that is sure to be a hit. Whether you are spreading it on sandwiches, crackers, or celery sticks, or using it as a dip for vegetables or chips, pimento cheese is a versatile dish that is easy to make and always delicious. So next time you are looking for a quick and tasty snack or appetizer, give pimento cheese a try. You won't be disappointed!
