ROAST PORK LOIN WITH CREAMY DIJON SAUCE

Roast Pork Loin With Creamy Dijon Sauce image

This is adapted from Miss Vickie's Big Book of Pressure Cooker Recipes. The original Recipe calls for more sour cream and flour, I reduced them to change the final sauce consistency to my personal preference. The Dijon gives the sauce a slight bite, and the roast is juicy, tender and perfectly done. Miss Vickie's directions specify not to remove the netting, but I find that removing it after cooking pulls off the brown crust, so I remove it and tie with kitchen string before browning.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 8

2 tablespoons olive oil
1 tablespoon butter
2 1/2 lbs boneless pork loin roast, net removed and retied with kitchen string
1 medium onion, chopped
3/4 cup white wine
2 tablespoons Dijon mustard
1/2 cup sour cream
1 tablespoon flour

Steps:

  • In your pressure cooker, heat the oil and butter over medium heat.
  • Add the roast, and brown on all sides, then remove from the pressure cooker and set aside.
  • Add the onions, and cook for a few minutes, until they start to soften.
  • Add the wine and mustard to the onions, and stir to combine.

CROCK POT ROAST PORK LOIN WITH CREAMY DIJON SAUCE

Crock Pot Roast Pork Loin With Creamy Dijon Sauce image

This is an adapted recipe prepared for the ZWT 8 France Crock Pot Challenge. The original recipe was IngridH's recipe #437150 #437150. I adapted this recipe to be used in a crock pot by adding some additional liquid, and using creme fraiche instead of sour cream. I used creme fraiche because it is more heat stable and doesn't curdle when added to hot liquids.

WINE AND DIJON MARINATED PORK LOIN

Wine and Dijon Marinated Pork Loin image

I created this recipe through a series of trial and error. As they say, practice makes perfect. You can make the marinade and cook the loin immediately or you can let the pork soak overnight. Either way, I promise this will be the best pork tenderloin you've ever had. It may seem like a lot of ingredients, but it is a very simple recipe and well worth the effort.

Pork Loin 3-4 lbs (leave the fat on, Pork fat rules.)
10 garlic cloves, crushed and minced
2 cups Dijon Mustard(High quality)
1/2 cup white Vinegar.
1/2 cup Extra Virgin Olive Oil.
4 tablespoons coarsley ground black pepper.
Pinch of Kosher Salt to taste.
Large sealable food storage bag.

Steps:

Seal the bag, shake it around, work it into the meat with your fingers. Refridgerate overnight or up to 5 hours. Cooking instructions: Get grill working up to 400 degrees. Cook until internal temperature reaches 140 degrees, turning three times, or as needed.

Tips:

  • Choose a good quality pork loin roast. Look for one that is evenly colored and has no signs of bruising or freezer burn.
  • Do not overcook the pork loin. It should be cooked to an internal temperature of 145 degrees Fahrenheit for medium-rare, 150 degrees Fahrenheit for medium, and 155 degrees Fahrenheit for well-done.
  • Let the pork loin rest for at least 10 minutes before slicing and serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful dish.
  • Serve the pork loin with your favorite sides. Some popular options include roasted vegetables, mashed potatoes, and green beans.
  • Use a sharp knife to cut against the grain of the meat. This will help prevent the meat from becoming tough and stringy.
