Time 55m

Yield 6 serving(s)

Number Of Ingredients 3

dill pickle
cream cheese
thinly sliced ham

Steps:

  • Let the cream cheese sit at room temperature for at least 30 minutes before you make these.
  • Cut dill pickles lengthwise into fourths or sixths, depending on how thick the pickles are. You need as many cut pickle spears as you have ham slices.
  • Spread each slice of ham with a very thin layer of cream cheese. (I used about 1 teaspoons cream cheese on each ham slice. The ham doesn't need to be completely covered with cream cheese.).
  • Put a dill pickle on the edge of each ham slice and trim the ham if it's very much bigger than the dill pickle spear. Roll up the ham around the dill pickle, then place toothpicks where you want each piece to be cut. Cut into pieces so that each piece has a toothpick. Arrange on plate and serve.

Number Of Ingredients 10

Ingredients
1 (8 oz.) package cream cheese, softened
2 T. mayonnaise
1 T. grated onion
1/2 tsp. dried dill weed
1/8 tsp. ground black pepper
12 baby dill pickles
12 slices white bread {or white whole wheat}
Hard salami slices {optional}
Directions

Steps:

  • in a small mixing bowl, combine cream cheese, mayonnaise, grated onion, dill weed, and pepper. Mix until well combined. Cut crusts from bread slices and roll each slice flat with a rolling pin. Spread cream cheese mixture thinly on the bread slices, using approximately one tablespoon mixture per bread slice. Place a baby dill pickle on each and roll up.* Place seam side down in a glass baking dish. Cover and chill in the refrigerator 8 hours, or overnight. To serve, cut each pickle roll into three pieces. Makes 36 bites.*If using hard salami slices, spread about 1/2 T. cream cheese mixture on a bread slice, top with a slice of hard salami, and spread with remaining 1/2 T. cream cheese mixture. Place the baby dill pickle on top of the second layer of cream cheese mixture, and roll up.

Tips:

  • Choose the right cucumbers. The best cucumbers for pickle bites are small, firm, and have a thin skin. You can use pickling cucumbers or Kirby cucumbers.
  • Soak the cucumbers in ice water. This will help to crisp up the cucumbers and make them more flavorful.
  • Use a sharp knife to cut the cucumbers. This will help to prevent the cucumbers from breaking or tearing.
  • Make sure the pickle brine is boiling before you add the cucumbers. This will help to kill any bacteria and ensure that the pickle bites are safe to eat.
  • Let the pickle bites cool completely before you serve them. This will help to develop the flavor of the pickles.

Conclusion:

Dill pickle bites are a delicious and easy-to-make snack or appetizer. They are perfect for parties, picnics, or potlucks. With just a few simple ingredients, you can make your own delicious dill pickle bites at home. So what are you waiting for? Give this recipe a try today!
