Steps:
- Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet.
- If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT). Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place on the rack in the baking sheet.
- Bake for 40 to 45 minutes. (You don't want the bacon pieces to shrink so much they start to squeeze the jalapenos.) If after 45 minutes the bacon doesn't look brown enough, just keep cooking until the bacon is sizzling.
- Serve immediately, or they're also great at room temperature.

BAKED POTATO POPPERS
These crispy potato puffs unabashedly copy, but far surpass, the commercial brand found in the frozen section of your supermarket. Baked rather than deep-fried, they are perfectly crispy on the outside and meltingly soft on the inside. They will fool even the most die-hard tater tot fiend. You can't stop eating them. Panko bread crumbs are essential to the dish's success, providing the crispiest crunch. Excerpted from "Mad Hungry Cravings" by Lucinda Scala Quinn, Artisan Books, March 2013.

Steps:
- Preheat the oven to 425 degrees, with a rack in the middle position. Put a rimmed baking sheet in the oven to preheat. Peel and grate the potatoes, and transfer to a large bowl. Cover with boiling water by two inches. Let stand for 10 minutes.
- Drain the potatoes in a colander and rinse thoroughly with cold water. Squeeze the potatoes to remove excess moisture, and transfer back to the large bowl. Add the flour, cornstarch, salt, pepper, and egg yolk and fold into the potatoes.
- Spread the panko on another rimmed baking sheet. With wet hands, pinch off tablespoons of the potato mixture, form into balls, and coat with the panko crumbs.
- Carefully remove the hot baking sheet from the oven and coat with 2 tablespoons of the olive oil. Quickly transfer the poppers to the baking sheet and drizzle with the remaining 2 tablespoons olive oil. Bake for about 30 minutes, flipping once, until golden brown and crispy. Serve with ketchup.
Tips:
- Choose fresh, high-quality ingredients: The better the ingredients, the better the poppers will taste. Look for brightly colored vegetables, firm cheese, and fresh herbs.
- Use a variety of fillings: Don't be afraid to experiment with different fillings, such as spinach and feta, mushrooms and Swiss, or ham and pineapple. You can also add spices or herbs to taste.
- Make sure the filling is cold before assembling the poppers: This will help prevent the cheese from melting and making the poppers difficult to handle.
- Use a sharp knife to cut the wonton wrappers: This will help prevent the wrappers from tearing.
- Seal the poppers tightly: Make sure the edges of the wonton wrappers are pressed together firmly to prevent the filling from leaking out.
- Cook the poppers until they are golden brown: This will ensure that the filling is cooked through and the wonton wrappers are crispy.
- Serve the poppers immediately: They are best enjoyed hot and crispy.
Conclusion:
Dinner poppers are a delicious and versatile appetizer or snack that can be made with a variety of fillings. They are easy to make and can be cooked in the oven or air fryer. With a little creativity, you can create endless possibilities for dinner poppers that will please everyone at your table.
