Great for potlucks or to feed a crowd. Super easy! You could sub uncooked Minute Rice, but we prefer the flavor of the raw rice & Swanson Veggie Broth packet. **USE Swanson Vegetable Broth Packet instead of canned broth--Food.com needs to add this ingredient!**

1 lb ground beef, ground turkey (your choice) or 1 lb ground sausage (your choice)
1 1/2 cups white rice (uncooked)
1 large onion, chopped fine
1 large bell pepper, chopped fine
3 garlic cloves, minced
16 ounces tomato sauce
14 ounces pinto beans, undrained
3 teaspoons chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon paprika
salt, to taste
pepper, to taste
1 (4 ounce) can Swanson vegetable broth (1 Vegetable Flavor Boost Packet!!)

Steps:

  • Cook rice in pan according to directions, adding only the water and Swanson Veggie broth packet (if you don't have time for rice to cook completely, just get it started in the pan while the meat cooks. It will finish in the oven!).
  • Meanwhile, in large skillet brown the meat, along with the finely chopped onion, green pepper, and garlic. Once cooked through, add the seasonings and pintos. Stir to mix and remove from heat.
  • Place the cooked rice in a 13x9 casserole dish sprayed with Pam. Pour the tomato sauce on top of the rice. Refill the tomato sauce can with water; pour this on top of the rice as well. Stir well.
  • Add the meat mixture to the rice in the casserole dish. Mix to combine. Taste to see if you'd like more chili powder, pepper, etc.
  • Cover with foil & bake at 350 for 20-30 minutes, until rice is completely cooked and casserole is heated through. Serve with shredded cheese and/or sour cream if desired.

8 ounces hot sage pork sausage, casing removed
8 ounces ground beef
6 ounces chicken livers, finely chopped (optional)
1 medium onion, diced
1 green bell pepper, diced
2 large celery ribs, diced
3 large garlic cloves, minced
1 teaspoon fresh thyme leaves, chopped
2 bay leaves
1 1/2 cups long-grain white rice, rinsed and drained
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 1/2 cups beef broth
2 tablespoons Worcestershire sauce
3 scallions, sliced

Steps:

  • Heat the olive oil in a Dutch oven or large heavy-bottomed pot over medium-high heat. Add the sausage, ground beef and chicken livers and cook, breaking the meat into small bits with a wooden spoon, until no longer pink, 3 to 4 minutes. Transfer to a medium heatproof bowl with a slotted spoon.
  • Remove and discard all but 2 tablespoons of the fat from the Dutch oven. Add the onion, bell pepper and celery and cook down, stirring occasionally, until the vegetables have softened, 4 to 5 minutes. Add the garlic, thyme and bay leaves and cook, stirring frequently, until fragrant, about 1 minute. Stir in the rice, oregano, smoked paprika, cayenne, 1 1/2 teaspoons salt and 1/2 teaspoon black pepper and cook about 30 seconds. Stir the cooked meat back in, then add the beef broth and Worcestershire sauce. Bring to a boil, reduce the heat to a low simmer and cover. Cook until the rice is tender and has absorbed the liquid, about 18 minutes.
  • Remove from the heat. Remove and discard the bay leaves, stir in the scallions and season.

1 yellow onion, chopped

¼ pound chicken gizzards, rinsed
½ pound chicken livers, rinsed and trimmed
1 tablespoon vegetable oil
1 onion, finely chopped
3 cloves garlic, minced
2 cups uncooked white rice
4 cups chicken broth
salt to taste
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
1 cup thinly sliced green onions

Steps:

  • Pulse gizzards in food processor, then pulse livers.
