Try it in cream cheese desserts, pickles, chutneys and mulled wine too. Make it up and buy the spices needed in small quantities, as the mixture soon loses its full rich flavour. Allspice, cinnamon, cloves, nutmeg and ginger are the usual blend of spices, but I sometimes like to add a few ground cardamom seeds as well as some ground coriander seeds. This spice mixture makes an unusual and attractive gift - tie a ribbon around the neck of the jar, with pretty paper and then add a seasonal recipe tag.

2 inches piece cinnamon sticks
2 teaspoons cloves
2 teaspoons ground nutmeg
2 teaspoons ground ginger

Steps:

  • Grind the allspice, cinnamon and cloves to a fine powder and then mix well with the ground nutmeg and ginger.

2 teaspoons whole coriander seeds
1 teaspoon red pepper flakes, or more to taste

2 bay leaves, crumbled
2 cinnamon sticks, broken in half
6 whole cloves

Steps:

  • Place mustard seeds, allspice berries, whole coriander seeds, and red pepper flakes into a small glass jar with a tight-fitting lid. Shake to combine. Add ground ginger to seeds and shake again. Sprinkle crumbled bay leaves over spice mixture and place cinnamon stick halves into the jar. Seal and shake to combine. Mixture can be stored in the tightly sealed jar for up to 1 month without loss of flavor.
