If your looking at this you will need to check out her recipe for Doris Roberts' Lasagna on this site to "get" this comment. From our local newspaper.

1 pound ground veal, or a combination of ground veal and ground pork
1 cup freshly grated bread crumbs
2 tablespoons grated pecorino cheese
2 tablespoons minced parsley
1 clove garlic, finely minced
1 egg
1 1/2 to 2 cups extra-virgin olive oil

2 pounds ground beef
1/2 pound ground pork
2 cups Italian bread crumbs
4 eggs
1 cup milk
1 cup parsley, chopped fresh
1 cup cheese, grated
1 tablespoon olive oil
2 cloves garlic, chopped fine
1 onion, minced
1/2 cup Pignoli pine nutsoptionl

Steps:

  • Place all ingredients in a large bowl and mix thoroughly. Let stand 1/2 hour. Shape into medium sized meatballs. Fry gently in olive oil until lightly browned, or place on foil on a cookie sheet and bake for 1/2 hour at 350 degrees fahrenheit. Gently place in your own hot spaghetti sauce and cook on medium low heat for 1 hour.

Tips:

  • Choose the right ground meat: Doris meatballs are typically made with a combination of ground beef and ground pork, but you can also use all beef or all pork. If you're using a leaner type of meat, add some bread crumbs or oatmeal to help keep the meatballs moist.
  • Season the meatball mixture well: Don't be afraid to add plenty of herbs and spices to the meatball mixture. This is what will give them their flavor. Some good options include garlic, onion, parsley, oregano, basil, and thyme.
  • Don't overmix the meatball mixture: Overmixing will make the meatballs tough. Just mix the ingredients until they are evenly combined.
  • Form the meatballs into small, uniform balls: This will help them cook evenly. If you're having trouble forming the meatballs, try using a small ice cream scoop to make them.
  • Brown the meatballs before cooking them in the sauce: This will help them hold their shape and give them a nice crust.
  • Simmer the meatballs in the sauce for at least 30 minutes: This will help them absorb the flavors of the sauce and become tender.
  • Serve the meatballs with your favorite pasta or rice: Doris meatballs are a versatile dish that can be served with a variety of sides.
