1 cup raspberry preserves
3/4 cup water
2 tablespoons shortening
1/2 cup canola oil
1 ounce vanilla flavored square

Steps:

  • Preheat oven to 350°F.
  • Combine cake mix, pudding, eggs, 1/2 cup of the rum, water and oil in a large mixing bowl.
  • Using an electric mixer, beat at low speed until moistened.
  • Beat at medium speed for 2 minutes.
  • Stir in 1 cup of chocolate pieces.
  • Pour batter into a greased 12-cup Bundt pan.
  • Bake 50 to 60 minutes or until cake tests done.

1/2 cup organic icing sugar
2 1/2 cups whole-wheat pastry flour
1 cup unsweetened cocoa powder (Dutch-process is best)
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon sea salt
1 1/4 cups unsweetened applesauce
1 cup non-fat plain Greek yogurt
1/3 cup honey
1/3 cup organic sugar
1/3 cup unsalted butter
2 teaspoons pure vanilla extract
1 1/2 cups egg whites (about 12 large)

Steps:

  • Prepare icing: In a stand mixer fitted with a whisk attachment, or in a bowl using a whisk, combine yogurt, cocoa powder, melted chocolate and icing sugar until smooth. Cover and refrigerate for at least 12 hours, to firm up.
  • Preheat oven to 375 degrees F. Grease and flour two 10-inch cake pans.
  • Prepare cake: In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt.
  • In a food processor, pulse applesauce, yogurt, honey, sugar, butter and vanilla until smooth. Gradually mix into dry ingredients until just combined; do not overmix.
  • In a separate dry bowl, using an electric beater on high speed, whisk egg whites until soft peaks form. Using a spatula, fold egg whites into batter. (Batter should seem a little lumpy; do not overmix.)
  • Pour batter into prepared cake pans. Bake for 20 to 25 minutes, until a toothpick inserted in the centre comes out almost clean. Transfer pans to wire racks to cool for 20 minutes, then turn out cakes onto wire racks to cool completely.
  • Remove icing from the fridge and allow to warm at room temperature until easily spreadable, about 1 hour. Using a serrated knife, slice a small portion off the top of each cake so that the top is flat. Place 1 cake on a stand or flat plate; using an offset or regular spatula, spread a layer of icing over cut side. Place remaining cake cut side down on top of iced cake. Thinly spread about one-third of remaining icing all over cake to form a crumb coat (see Note). Refrigerate for about 1 hour until set, leaving remaining icing at room temperature. Once crumb coat has set, cover cake with remainder of icing. Serve immediately or refrigerate, bringing cake to room temperature before serving.

1 1/2 cups hot brewed coffee
3 cups sugar

3/4 teaspoon baking powder
1 1/4 teaspoons salt
3 large eggs
3/4 cup vegetable oil
1 1/2 cups well-shaken buttermilk

1 lb fine-quality semisweet chocolate, such as callebaut
1 cup heavy cream
2 tablespoons sugar

Steps:

  • Cake:
  • Preheat oven to 350 degrees.
  • Combine butter, cocoa and water in a saucepan.
  • Cook, stirring constantly, over low heat until the mixture is smooth and butter has melted; remove from heat and cool.
  • Combine the buttermilk, eggs, baking soda and vanilla; beat on medium speed with a mixer until smooth.
  • Combine the butter mixture and buttermilk mixture; beat until well blended.
  • Combine the sugar, flour and salt in a bowl; mix well.

3/4 cup vegetable oil plus more for greasing pans
3/4 cup natural unsweetened cocoa powder (not Dutch-process) plus more for dusting pans
1 cup water
3/4 cup well-stirred canned unsweetened coconut milk
3 large eggs, warmed in shell in warm water 5 minutes
1 1/2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 3/4 cups sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
Ganache frosting:
1 1/2 cups well-stirred canned unsweetened coconut milk
24 ounces (4 cups) semisweet chocolate chips (see Cooks' Notes)
2 teaspoons instant espresso powder
1 1/2 tablespoons light corn syrup
1 teaspoon pure vanilla extract

2 (9-inch) round cake pans (2 inches deep); parchment paper

Steps:

  • Bake cake layers:
  • Heat oven to 350°F with rack in middle. Oil pans and line bottoms with rounds of parchment, then dust sides only with cocoa powder, knocking out excess.
  • Whisk together water, coconut milk, 3/4 cup oil, eggs, and vanilla in a bowl until well blended and smooth.
  • Sift together flour, sugar, 3/4 cup cocoa powder, baking powder and soda, and salt into a large bowl. Add wet ingredients to flour mixture and whisk until smooth.
  • Divide batter between pans, and bake until a tester comes out clean and layers just begin to pull away from side of pans, 25 to 30 minutes.

  • Make frosting:
  • Combine coconut milk, chocolate chips, and espresso powder in a heat-proof bowl. Set bowl over a pan of barely simmering water, and heat, whisking occasionally, until chocolate is melted and smooth.
  • Remove bowl from pan and whisk in corn syrup and vanilla.
  • Chill frosting, stirring occasionally, until slightly thickened and spreadable, about 2 hours. (To quick-chill, place bowl in the freezer and stir occasionally until chocolate mixture is thickened and spreadable, 20 to 30 minutes.)
  • Assemble cake:
  • Spread frosting generously between cake layers and over top and sides.

  • Preheat oven to 350 degrees. Lightly butter and flour a 4 1/2-by-8 1/2-inch loaf pan. In a large bowl, using an electric mixer, beat butter and sugar on medium-high until very light and fluffy, 7 minutes. Scrape down bowl and beat 1 minute more. Add vanilla, then gradually add eggs, beating well and scraping down bowl as needed. 1 recipe Double Chocolate Ooey Gooey Butter Cake, recipe follows
Cookie crumbs, your choice
Handful of nuts, preferably pecans
Hot fudge
Butter, for greasing pan, plus 16 tablespoons (2 sticks) butter, melted, divided
1 (18.25-ounce) package chocolate cake mix
3 eggs, divided
1 (8-ounce) package cream cheese, softened
3 to 4 tablespoons cocoa powder
1 (16-ounce) box powdered sugar
1 teaspoon vanilla extract
1 cup chopped nuts

Steps:

  • Cut Ooey Gooey Butter Cake into bite-sized pieces, adding it to chocolate ice cream.Crumble your choice of cookies and add to the ice cream while adding your choice of nuts. Add hot fudge to your desire and mix together.
  • Preheat oven to 350 degrees F. Lightly butter a 13 by 9-inch baking pan.
  • In a large bowl, combine the cake mix, 1 egg, and 8 tablespoons (1 stick) melted butter, and stir until well blended. Pat mixture into prepared pan and set aside. In a stand mixer, or with a hand mixer, beat the cream cheese until smooth. Add the remaining 2 eggs, and the cocoa powder. Lower the speed of the mixer, and add the powdered sugar. Continue beating until ingredients are well mixed. Slowly add the remaining 8 tablespoons (1 stick) of melted butter, and the vanilla, continuing to beat the mixture until smooth. Stir in nuts with a rubber spatula. Spread filling over cake mixture in pan.
  • Bake for 40 to 50 minutes. Be careful not to overcook the cake; the center should still be a little gooey when finished baking. Let cake partially cool on a wire rack before cutting into pieces.

2/3 cup boiling water

Steps:

  • Preheat oven to 350 degrees.
  • Butter and flour 2 x 9" round pan.
  • Combine sour cream, cocoa and water, blend well (set aside).
  • Mix flour, baking soda, baking powder and salt into bowl (set aside).
  • In a large bowl beat butter and sugar on medium high speed for 2 minutes until light and fluffy.
  • Lower speed and add vanilla and almond extracts, add eggs one at a time, blend well.
  • Add flour 3 times to butter mixture, alternating 2 times with milk mixture-- starting and ending with flour.
  • Mix well.
  • Pour batter evenly into both pans and bake in a 350 degree oven for 20- 25 minutes.
  • Cool on racks for 20 minutes before removing pans.
  • Cool completely before frosting.
  • Beat whipping cream with icing sugar until stiff but not dry.
  • Place one cake on platter, frost with 1 cup whipped cream to 1/2" from edge of cake, sprinkle white chocolate chips on top of whipped cream and top with the chopped and drained cherries.
  • Put 2nd cake overtop of first cake and frost the top and sides with the remaining whipped cream.
  • You can add chocolate curls or marashino cherries to decorate if desired.

Steps:

  • Stir into liquid ingredients and mix just until blended.
  • Pour batter into 2 greased and floured sandwich cake tins[8-9 inch size].
  • Bake in a preheated 375 deg F oven for 20-25 minutes or until a toothpick inserted in the centre comes out clean.
  • Cool and then ice.
  • Icing: Bring sugar and cream to a boil.
  • Reduce heat and simmer for 5 minutes.
  • Stir occasinaly to stop cream from boiling over.
  • Remove from heat.
  • Finely chop or grate the chocolate.
  • Sir into the cream until completely melted.
  • Stir in butter and vanilla.
  • Once butter is melted, refrigerate icing until cold.
  • Once cold beat the icing with an electric mixer or a wooden spoon until thick and of a good spreading consistency.

1 1/4 teaspoons baking powder, divided
2 ounces bittersweet or semisweet chocolate, chopped
2/3 cup unsweetened cocoa powder
2 3/4 cups all-purpose flour
1 1/4 teaspoons baking soda
1/2 teaspoon kosher salt
1 1/3 cups mayonnaise
1 cup granulated sugar
1 cup (packed) dark brown sugar
1 teaspoon vanilla extract
For the frosting:
1 pound, 3 ounces bittersweet chocolate, chopped
1 cup refined coconut oil
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
1/4 teaspoon peppermint extract
For the chocolate petals:
1 pound, 5 ounces bittersweet chocolate, coarsely chopped
2 candy canes, lightly crushed
Special Equipment
2 (9") round cake pans; a 1" pastry brush

Steps:

  • For the cake:
  • Position a rack in center of oven; preheat to 350°F. Lightly coat cake pans with nonstick spray. Line bottom of pans with parchment paper; lightly coat parchment with nonstick spray.
  • Whisk applesauce and 1 tsp. baking powder in a small bowl. Mix chocolate and cocoa powder in a medium bowl. Pour 1 3/4 cups boiling water over and whisk until chocolate is melted. Sift flour, baking soda, salt, and remaining 1/4 tsp. baking powder into another medium bowl.
  • Using an electric mixer on medium speed, beat mayonnaise, granulated sugar, and brown sugar in a large bowl (or use a stand mixer fitted with the paddle attachment) until well blended, about 3 minutes. Add half of applesauce mixture and beat to blend. Add remaining applesauce mixture, then beat in vanilla. Add dry ingredients in 3 additions, alternating with chocolate mixture in 2 additions, beginning and ending with dry ingredients, beating to blend after each addition and occasionally scraping down sides of bowl. Divide batter among prepared pans; smooth top.
  • Bake cakes, rotating pans halfway through, until center is set and a tester inserted into the center comes out clean, 40-45 minutes. Transfer pans to a wire rack and let cakes cool 10 minutes. Run a knife around sides of cakes and invert onto wire rack; remove parchment. Let cool.
  • For the frosting:
  • Heat chocolate, coconut oil, vanilla, and salt in a medium heatproof bowl set over a medium pot of barely simmering water (bottom of bowl should not touch water), stirring occasionally, or in short bursts in the microwave, stirring in between bursts, until chocolate is melted and smooth. Whisk in peppermint extract and 1/4 cup water. Chill, stirring every 5 minutes, until frosting thickens, about 25 minutes. If frosting gets too thick, gently reheat over pot of simmering water.
  • For the chocolate petals:
  • Heat chocolate in a medium heatproof bowl set over a medium pot of barely simmering water (bottom of bowl should not touch water), stirring occasionally, or in short bursts in the microwave, stirring in between bursts, until chocolate is melted and smooth.
  • Dip clean, dry pastry brush into melted chocolate. Brush a stripe of chocolate about 3" long and 1/8" thick on a parchment-lined baking sheet. Chill. Repeat process on second parchment-lined baking sheet. Swap trays and go over original brush strokes, repeating and chilling in between coatings and gently reheating chocolate if needed, until stems are 1/4" thick.
  • When stems are thick enough, sprinkle one end with crushed candy canes. Chill until set, about 10 minutes.
  • For assembly:
  • Spread 1 Tbsp. frosting in the center of a platter. Place 1 cake layer, domed side down, on platter. Spread 1 1/2 cups frosting evenly over top. Place remaining cake layer, domed side down, over frosting.
  • Spread top and sides of cake with remaining 2 cups frosting, swirling top decoratively. Press chocolate stems into frosting on sides of cake. Serve at room temperature.
  • Do Ahead
  • Cake can be made 3 days ahead; wrap tightly in plastic and chill, or freeze up to 2 weeks. Frosting can be made 5 days ahead; chill, or freeze up to 1 month. Gently reheat over pot of simmering water or in short bursts in the microwave, stirring in between bursts. Chocolate stems can be made 3 days ahead; keep chilled.
