Tips:

  • Use fresh ingredients: Fresh corn, tomatoes, and peppers will give your casserole the best flavor. If you can't find fresh corn, you can use frozen corn that has been thawed and drained.
  • Don't overcook the corn: The corn should be tender but still have a little bit of crunch to it. Overcooked corn will be mushy and bland.
  • Use a variety of cheeses: A combination of cheeses, such as cheddar, mozzarella, and Monterey Jack, will give your casserole a rich and flavorful sauce.
  • Don't skimp on the spices: Chili powder, cumin, and paprika are essential for giving this casserole its signature flavor. You can also add other spices, such as garlic powder, onion powder, or cayenne pepper, to taste.
  • Top with your favorite toppings: Before baking, top the casserole with your favorite toppings, such as sour cream, salsa, guacamole, or chopped cilantro. This will add extra flavor and texture to the dish.

Double Corn Tortilla Casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover corn and tortillas.
