DOUGH ENHANCER
I kept reading about dough enhancer but couldn't find it in any of our stores. A dough enhancer is a powder that is supposed to make your dough smoother and is what commercial bakers often use to obtain the smooth textured bread you buy in the store. My bread doesn't last long since we eat it quickly, but it is supposed to help with shelf life as well!

This mix will help make your bread raise higher and have a better texture. It should also help your bread stay fresher a little longer. It won't change the taste of your bread, but it will make your bread lighter. Try it!

Steps:
- Add one tablespoon to each loaf of bread mix (about 1 Tbsp per 3 cups of flour). Make bread as called for in your directions!
- *Fruit Fresh can be found in the section of your store that carries canning supplies- it is often added to fruit jams to keep them from browning. It is actually just a form of vitamin C (ascorbic acid).
- As for the lethicin, I use Bobs Red Mill brand available in larger grocery or health food stores wherever you find his brand of bagged grains.

DOUGH ENHANCER RECIPE - (5/5)
Provided by Tinkerbelle
Number Of Ingredients 3
Steps:
- Mix all ingredients and store in tightly closed glass jar. Add to bread maker in amount equal to yeast with other dry ingredients. Start machine. The ginger gooses the yeast and makes it act more swiftly, the ascorbic acid strengthens the gluten, and the lecithin aids the oil in causing the strands of gluten to slip against each other more easily and thus rise better. Lecithin is a food supplement which is obtained from oil in egg yolks or soy beans. It improves moisture and assists in expansion and elasticity of the bread dough. Add between 1 and 1-1/2 tsp of lecithin granules per cup of flour. May substitute oil for lecithin: 1-1/2 t per C of flour. It appears vinegar may also be used as a substitute. Use 1 T ascorbic acid per 3-1/2 C flour in recipe
Tips:
- Maintain Proper Hygiene: Always wash your hands and kitchen surfaces thoroughly before handling dough. This helps prevent contamination and ensures a safe and clean dough-making process.
- Use Quality Ingredients: Use high-quality flour, yeast, and other ingredients for your dough. Fresh and high-quality ingredients contribute to the overall taste, texture, and quality of your baked goods.
- Follow the Recipe Accurately: Stick to the recipe's instructions and measurements precisely. Small variations can impact the final outcome of your baked goods.
- Proper Kneading and Mixing: Knead or mix the dough thoroughly to ensure even distribution of ingredients and gluten development. Proper mixing and kneading contribute to the dough's elasticity and texture.
- Appropriate Rising Time: Allow the dough to rise for the specified time. Proper rising allows the yeast to work its magic, resulting in light, airy, and flavorful baked goods.
- Control Oven Temperature: Preheat your oven to the correct temperature before baking. Maintaining accurate oven temperature is essential for achieving evenly baked goods with the desired texture and color.
- Monitor Baking Time: Keep an eye on the baking time and check the doneness of your baked goods regularly. Over-baking can result in dry and tough textures, while under-baking can leave them undercooked.
