THE ULTIMATE BARBECUED CHICKEN

The Ultimate Barbecued Chicken image

For the Ultimate Barbecued Chicken, Tyler Florence first grills the bird, then bastes it in his homemade sauce from Food Network.

Provided by Tyler Florence

Categories     main-dish

Time 3h20m

Yield 6 servings

Number Of Ingredients 19

2 quarts water
2 tablespoons kosher salt
1/4 cup brown sugar
2 garlic cloves, smashed with the side of a large knife
4 sprigs fresh thyme
6 chicken legs and thighs, still connected, bone in, skin on, about 10 ounces each
1 slice bacon
1 bunch fresh thyme
Extra-virgin olive oil
1/2 onion, chopped
2 garlic cloves, chopped
2 cups ketchup
1/4 cup brown sugar
1/4 cup molasses
2 tablespoons red or white wine vinegar
1 tablespoon dry mustard
1 teaspoon ground cumin
1 teaspoon paprika or smoked paprika if available
Freshly ground black pepper

Steps:

  • For the brine, in a mixing bowl combine the water, salt, sugar, garlic, and thyme. Transfer the brine to a 2-gallon sized re-sealable plastic bag. Add the chicken, close the bag and refrigerate 2 hours (if you've only got 15 minutes, that's fine) to allow the salt and seasonings to penetrate the chicken.
  • Meanwhile, make the sauce. Wrap the bacon around the bunch of thyme and tie with kitchen twine so you have a nice bundle. Heat about 2 tablespoons of oil in a large saucepan over medium heat. Add the thyme and cook slowly 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add the onion and garlic and cook slowly without coloring for 5 minutes. Add the remaining ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes to meld the flavors. Once the sauce is done cooking, remove about 1 1/2 cups of the sauce and reserve for serving along side the chicken at the table. The rest of the barbecue sauce will be used for basing the legs.
  • Preheat oven 375 degrees F.
  • Preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface. Take the chicken out of the brine, pat it dry on paper towels. Arrange the chicken pieces on the preheated grill and cook, turn once mid-way, and cook for a total of 10 minutes. Transfer the grill marked chicken to a cookie sheet and then place in the oven. Cook the chicken for 15 minutes, remove it from the oven and then brush liberally, coating every inch of the legs with the barbecue sauce and then return to the oven for 25 to 30 more minutes, basting the chicken for a second time half way through remaining cooking time. Serve with extra sauce.

Time 9h50m

Yield 6 to 8 servings

Number Of Ingredients 27

2 chickens (or 4 whole bone-in chicken breasts) halved lengthwise
1 1/2 cups Neely's Italian Dressing, recipe follows
1/4 cup Neely's Barbecue Seasoning, recipe follows
1 cup Neely's Barbecue Sauce, recipe follows
2 tablespoons ground mustard
2 garlic cloves, smashed
1 tablespoon crushed red pepper flakes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 tablespoon sugar
2 tablespoons Neely's Barbecue Seasoning
1/3 cup red wine vinegar
1 cup canola oil
Salt and pepper
1 1/2 cups paprika
3/4 cup sugar
3 3/4 tablespoons onion powder
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce

Steps:

  • Rinse chicken halves in cold water and pat dry with paper towels. Place chicken in a large bowl or baking dish, coat with Italian dressing and evenly season with Neely's Barbecue Seasoning. For best results, allow the chicken to marinate in the refrigerator overnight.
  • If cooking inside: Take the chicken out of the refrigerator and brush chicken with Neely's Barbecue Sauce.
  • Place into a preheated 350 degree F oven for 45 minutes.
  • If grilling outside: Thirty minutes before you're ready to cook, take the chicken out of the refrigerator and allow it to come to room temperature. Preheat the grill to a medium temperature, about 275 degrees F preferably over hickory and charcoal.
  • Place the chicken halves on grill, meat side down. Cover grill and cook for about 50 minutes. Flip chicken over and let it brown until the chicken becomes golden, about 15 to 20 minutes. The wing and the drumstick should become very tender and will easily pull away at the joints. Brush the chicken with Neely's Barbecue Sauce during the last 5 minutes of cooking.
  • Mix all the ingredients together in a bowl, except the oil and salt and pepper. Slowly whisk in the oil and season with salt and pepper, to taste.
  • Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
  • In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.

BACKYARD BARBECUED CHICKEN WITH HOMEMADE BBQ SAUCE

Backyard Barbecued Chicken with Homemade BBQ Sauce image

This kid-friendly dish is about as simple as it gets, my friends. If you don't have the time to prepare the homemade barbecue sauce, simply make sure to buy a quality bottled sauce. This recipe is from "Emeril at the Grill" by Emeril Lagasse.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Number Of Ingredients 3

8 whole chicken leg quarters
Salt and freshly ground black pepper, to taste
2 cups Homemade BBQ Sauce

Steps:

  • Preheat a grill to medium-low, and brush the grate with oil.
  • Season both sides of the chicken legs with salt and pepper. Place the chicken on the grill, skin side down, and cook, adjusting the chicken's position and turning the pieces occasionally, until it appears to be about halfway cooked, about 15 minutes. Then use a basting brush to brush the chicken legs with the barbecue sauce, and continue to cook, turning the pieces frequently and reapplying barbecue sauce each time the chicken is turned, until it is cooked through and an instant-read thermometer inserted into the thickest part registers 160 to 165 degrees, 15 to 20 minutes. Serve the chicken hot or warm.

THE BEST OVEN BARBECUED CHICKEN

The Best Oven Barbecued Chicken image

This chicken has the best tangy barbecue sauce! Can't get enough of this one. We serve it with a warm baked potato and drizzle the extra sauce all over everything! Yummy!

Provided by MadzMom

Categories     Chicken

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 9

4 chicken breasts
1/4 cup water
1/4 cup apple cider vinegar
1/2 cup ketchup
3 tablespoons Worcestershire sauce
1 tablespoon dry mustard
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons diced onions (I use white)

Steps:

  • Combine all ingredients, except the chicken, and simmer for 10 minutes.
  • Put chicken in baking dish and half of the sauce over it.
  • Set aside rest of sauce to pour over cooked chicken.
  • Bake at 350°F for 50- 60 minutes, basting twice.

Tips:

  • Choose the right chicken: Use a whole chicken or chicken pieces with the skin on. This will help keep the chicken moist during cooking.
  • Make a flavorful marinade: The marinade is what gives the chicken its flavor, so make sure to use a flavorful combination of spices and herbs. Some popular options include garlic, paprika, cumin, chili powder, and oregano.
  • Let the chicken marinate for at least 4 hours, or overnight: The longer the chicken marinates, the more flavorful it will be. If you're short on time, you can marinate the chicken for as little as 30 minutes, but the flavor will be less pronounced.
  • Cook the chicken over low heat: This will help prevent the chicken from drying out. The ideal temperature for cooking chicken is between 325°F and 350°F.
  • Baste the chicken regularly: Basting the chicken with the marinade or a mixture of melted butter and water will help keep it moist and flavorful.
  • Cook the chicken until it is cooked through: The internal temperature of the chicken should reach 165°F before you remove it from the grill or oven.

Conclusion:

Barbecued chicken is a delicious and versatile dish that can be enjoyed by people of all ages. Whether you're cooking it in the oven, on the grill, or in a slow cooker, there's a recipe out there that will suit your needs. With a little planning and effort, you can create a delicious barbecued chicken that will be the hit of your next party or family gathering.
