DOWN-HOME GOULASH
This is my take on American Goulash, Down-Home Goulash. Originally I ran across a recipe for goulash while enjoying some good ol Paula Deen ( Bobby's Goulash.) The recipes are similar, enough so that I have to make sure I give a wink and a nudge to the Deens. Now Bobby might not like mine as much as his mama's but in this house we think it is pretty darn good (we liked Paula's too don't get me wrong.) Now the pasta turns out really soft for those who aren't familiar with country goulash. It is also one of the most versatile recipes. The additions you can add are endless and all just as good. Mushrooms, bell peppers, olives, corn, etc. are all great. It really just all depends on what you and your family enjoy. We garnished with shredded cheddar and sour cream, but again its all about what you like. Just experiment and have fun and let me know how it turns out! If you make it and really do not like the mushy noodles (I know some folks just don't) they you can boil and drain the pasta separate, you will just want to lessen the amount of broth. Just add in until it is the consistency you like, and be sure to watch your salt so you don't make it too salty. If you are unsure just half the recipe and try it out since this does make a pretty healthy pot of food.

- Once it comes to a boil add in the macaroni, stir to combine, and cover, lowering the temperature to a simmer. Continue simmer for 30 minutes. Turn off the heat and allow to rest for 20 to 30 minutes longer. Serve topped with your favorite toppings such as cheese and sour cream.
GOULASH
Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

Steps:
- Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
- Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
- Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
- Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.
EASY BEEF GOULASH
"I found the recipe for this stovetop goulash several years ago in an old cookbook," reports Phyllis Pollock of Erie, Pennsylvania. "It really his the spot with warm home-baked bread from the bread machine and a dish of cold applesauce."

Tips:
- Choose high-quality ingredients: Use fresh, flavorful vegetables, tender cuts of beef, and a rich, flavorful broth. Opt for organic ingredients whenever possible.
- Brown the beef in batches: This helps to develop a deep, rich flavor and prevents the meat from overcrowding the pan and steaming instead of browning.
- Use a variety of vegetables: A mix of vegetables adds color, texture, and flavor to the goulash. Choose vegetables that hold their shape well during cooking, such as carrots, potatoes, and bell peppers.
- Season the goulash well: Use a combination of salt, pepper, paprika, and other spices to taste. Don't be afraid to adjust the seasonings to your preference.
- Simmer the goulash for at least 1 hour: This allows the flavors to meld and develop. The longer you simmer the goulash, the more flavorful it will be.
- Serve the goulash with your favorite sides: Goulash is traditionally served with egg noodles, mashed potatoes, or bread. You can also add a dollop of sour cream or yogurt for a creamy touch.
Conclusion:
Down-home goulash is a hearty, flavorful dish that is perfect for a cold winter day. It is also a versatile dish that can be easily customized to your own taste. With a few simple tips, you can make a delicious goulash that your family and friends will love. So next time you are looking for a comforting and satisfying meal, give down-home goulash a try.
