DREAMLAND BBQ SAUCE (DREAMGODDESS'S COPYCAT VERSION)
Dreamland BBQ...one of THE best rib joints in the state of Alabama. They make ribs so delicious, it'll make you wanna cry! It's worth every minute of the two hour drive from my house just to eat their ribs, not to mention the plate of Sunbeam bread and bowl of barbecue sauce (for dipping the bread in, of course!) that's brought to the table when you first arrive. I found a copycat recipe (which was an excellent recipe, by the way)for their famous sauce on another website, but I thought it needed just a bit of tweaking. I think Dreamland's sauce has more of a vinegar taste to it and it is definitely hotter than the copycat recipe. This is my version of the copycat recipe that I've tweaked a bit to taste more (in my humble opinion) like Dreamland's original sauce. This recipe makes a very thin bbq sauce.

Steps:
- Combine the tomato and mustard in a dutch oven.
- Stir together until well mixed.
- Add remaining ingredients.
- Bring to a boil, reduce heat and simmer for 30 minutes.
- Serve warm with smoked or grilled ribs.
- You can also do as we do at Dreamland, take a piece of plain white bread and dunk it in the sauce.
- Absolute heaven in a bowl!
DREAMLAND
Steps:
- Soak mushrooms until soft and remove the stem. Cut the mushroom in twirl strips by cutting from outer edge to center (approximately 1/2-inch wide). Squeeze out excess water and marinate with five spice, salt, and sugar for 5 minutes and then wheat mesh, sesame oil, soy sauce, and cornmeal for 30 minutes.
- Heat vegetable oil in wok until almost smoking. Deep-fry mushrooms until crispy and remove from oil. Deep-fry spinach linguine until crispy (approximately 1 1/2 minutes) and place on dish. Stir-fry fresh bean sprouts with wine and pepper and place on top of linguine. Mix soy paste, vinegar, sugar, and wine in skillet until hot and then stir in mushrooms. Transfer it on top of linguine and bean sprout. Garnish with ginger on top.

- In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Pat into a 13x9-in. baking pan. These ribs are melt in your mouth delicious. They are time consuming to make, but are well worth it. Prepare them the night before you want them. the final grilling is just to heat them up with sauce.

Steps:
- Heat Gill up to High.
- Remove the membrane off the inside of the rib. take a filet knife and work between the bone and the membrane until you can get you finger under the membrane. You should be able to easily pull it off once you get hold of it. this is an important step.
- brush the ribs with butter or bacon grease and liberaly salt, put on hot grill.
- sear both sides of the ribs. your looking to brown the outsides, not cook them.
- In a half size aluminum roasting pan place water and liquid smoke.
- Cut ribs in half and put lots of white pepper. lots. resalt and pack in pan with stand them up and remember that they are going to be covered, no bones sticking out.
- cover extra tightly with foil, I double cover mine. If there if a hole, the ribs will dry out :(.
- t 250 degrees bake, cook ribs for 6 hours .
- remove ribs and drain .refridgerate for 2 hours to overnight.
- pour Cattlemans into a bowl big enough to dip ribs submerse ribs. completely submeres the ribs.
- Over high heat on the grill, place the ribs, bone side down, on the grill, cook till sauce is starting to brown. do not burn.
