When I was first married, I wasn't a great cook. Twenty years later, I have many dishes I'm proud of, including this family favorite. Basil, oregano and Romano cheese give these beans their Italian accent. I serve them with broiled steak, pork roast, lamb chops or pork chops. -Andrea Ibzag, Gordon, Wisconsin

GARLIC ITALIAN GREEN BEANS

Garlic Italian Green Beans image

An easy way to prepare green beans that will usually even get those who don't like green beans to eat them :) These come a little better if you thaw the green beans first -in fridge for a few hours, or if time constricted - I have popped them in the microwave for a few minutes. The measurements for dry ingredients are approximate - you can play with them an adjust to your own taste - I usually don't measure mine. This recipe doubles well.

  • Choose fresh, tender green beans. Look for beans that are bright green and snap easily when you bend them.
  • Trim the green beans before cooking. Remove the tough ends of the beans and any strings that may be present.
  • Blanch the green beans before sautéing. This will help them retain their color and crispness.
  • Use a large skillet or sauté pan. This will give the green beans plenty of room to cook evenly.
  • Sauté the green beans over medium-high heat. This will help them cook quickly and evenly.
  • Add your favorite seasonings to the green beans. Garlic, salt, pepper, and olive oil are all classic choices.
