Time 4h45m

Yield Six servings

Number Of Ingredients 10

1 pound skinless, split dried fava beans
Salt to taste
5 garlic cloves, chopped
1/4 to 1/2 cup olive oil
1/2 teaspoon paprika
1 1/2 to 2 teaspoons cumin
1/4 teaspoon turmeric
Pinch of cayenne pepper
Juice of 2 lemons
1 large bunch coriander chopped, about 1/2 cup

Steps:

  • Soak the beans in water for 2 hours, drain and put in a pot with 2 quarts of cold water. Bring to a boil, skim and simmer, covered, for 2 hours, until the beans are very soft. Add the salt and mash the beans by hand or, for a smoother texture, puree in a blender and return to the pot.
  • Fry the garlic in 2 tablespoons of the olive oil until golden, about 3 minutes. Add the paprika, cumin, turmeric and cayenne. Add to the soup and simmer for 30 minutes longer, adding water if the soup becomes too thick. Just before serving, stir in the lemon juice and the coriander. Garnish with a drizzle of olive oil, if desired.

LISA'S DRIED GREAT NORTHERN BEAN SOUP

Lisa's Dried Great Northern Bean Soup image

This is a family favorite we have all the time. We eat it with crackers but you could also serve with cornbread. It's a wonderful dish on a cold day , but we like it anytime.

Provided by linguinelisa

Categories     Beans

Time 3h10m

Yield 6 serving(s)

Number Of Ingredients 8

2 cups dried great northern beans
8 cups water
1 small onion, minced
1 garlic clove, minced
1 bay leaf
ham hock
salt, to taste
black pepper, to taste

Steps:

  • Look over the beans and remove any rocks or broken beans. Rinse the beans and put in a large pot. Add water, about 8 cups or enough to cover by at least an inch. Bring to a boil on stove. Add onions, garlic, bay leaf and ham hock. Return to a boil. Reduce heat, cover and simmer for 2 to 3 hours, stirring occasionally. Makw sure you don't run out of water and that the beans don't scorch. Add more water if necessary.
  • After beans have softened (about 2 hours), add salt and pepper to taste.
  • Continue cooking until beans are done. Make sure the soup is not too thick or too thin. (I usually get it too thick but you can always add water to thin it out.). Remove bay leaf and serve.

Tips:

  • Soak beans overnight: Soaking helps to reduce cooking time and removes some of the indigestible sugars that can cause gas.
  • Use a variety of beans: Different beans have different flavors and textures, so using a variety will give your soup a more complex flavor.
  • Add vegetables and herbs: Vegetables and herbs add flavor and nutrition to your soup. Some good options include carrots, celery, onions, garlic, parsley, thyme, and bay leaves.
  • Cook soup low and slow: Cooking soup over low heat for a long period of time helps to develop the flavors.
  • Season to taste: Add salt, pepper, and other seasonings to taste. You can also add a squeeze of lemon juice or a dollop of yogurt for a finishing touch.

Conclusion:

Dried bean soup is a delicious, hearty, and affordable meal that is perfect for a cold winter day. With a little planning and effort, you can easily make a delicious pot of soup that your family and friends will love. So next time you're looking for a comforting and satisfying meal, give dried bean soup a try. You won't be disappointed!
