A grown up version of an old favorite: moist banana muffins with chocolate chips, shredded coconut and Jack Daniels® for a little extra kick. I love playing with recipes and wanted something more than the standard banana muffin.

1 ¾ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
4 ripe bananas
⅓ cup softened unsalted butter
¾ cup white sugar
1 egg
1 teaspoon vanilla extract
¼ cup whiskey (such as Jack Daniel's®)
½ cup unsweetened flaked coconut
1 cup mini chocolate chips

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners. Whisk the flour, baking soda, and salt together in a bowl; set aside.
  • Beat the bananas, butter, and sugar with an electric mixer in a large bowl until smooth. Beat in the egg, vanilla extract, and whiskey. Mix in the flour mixture until just incorporated. Fold in the coconut and chocolate chips, mixing just enough to evenly combine. Pour into muffin pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Tips:

  • To achieve the authentic Thai flavor, it's crucial to use the right ingredients. This includes using fresh herbs, such as kaffir lime leaves, lemongrass, and cilantro, as well as authentic Thai sauces, such as fish sauce, oyster sauce, and sweet chili sauce.
  • When preparing the drunken noodles, it's important to use wide rice noodles, which are able to absorb the flavors of the sauce better than thin noodles. You can find these noodles in most Asian grocery stores.
  • To ensure that the drunken noodles are properly cooked, it's important to stir-fry them on high heat. This will help to create a slightly charred flavor and texture, which is characteristic of this dish.
  • If you're looking for a vegetarian version of drunken noodles, you can easily substitute tofu or tempeh for the chicken or shrimp. You can also add more vegetables, such as broccoli, carrots, or bell peppers.
  • Drunken noodles are best served immediately after they are cooked. However, you can also store them in the refrigerator for up to 3 days or in the freezer for up to 2 months.

Conclusion:

Drunken noodles, also known as Pad Kee Mao, is a popular Thai dish that combines the flavors of sweet, sour, and spicy. It's a delicious and easy-to-make dish that can be enjoyed as a main course or as a side dish. With its unique flavor and aroma, drunken noodles are sure to be a hit with your family and friends.
